Turkey Nachos

Lately, I’ve been into tacos.  They are easy and quick to make on a weeknight and there are a TON of different ways to make tacos.  Whether you like to add beans and cheese, down to the type of meat!

However, I wanted something lighter for dinner with less carbs.  I decided to make turkey nachos for dinner.  Yes, I know tortilla chips are carbs but the crunchy chips don’t feel as heavy as flour tortillas do!  I am sure many of us don’t have nachos often unless we are at the movies or for a special occasion like the Super Bowl!

These turkey nachos were delicious, yet didn’t feel heavy or greasy.

Ingredients

  • 1 lb of ground turkey

  • Taco Seasoning Mix (I like the less sodium packet)

  • 3 tbs of olive oil

  • 1/2 red pepper, diced

  • 1/4 cup of sliced onion

  • 1 avocado, diced

  • 1/2 cup of Colby jack cheese, shredded

  • 1/2 cup of salsa

  • 1 avocado, cubed with a sprinkle of salt

  • 1/4-1/2 cup of pickled jalapeños (to your liking)

  • 1/2 cup of a large tomato or 1 small tomato, diced

  • handful of cilantro (optional)

  • Tortilla Chips

Directions

  • Heat a skillet on medium high and add the red pepper, onion and tomato. Cook and stir for a few minutes until the onion becomes translucent and the tomato softens up.
  • Add the the remaining 2 tbs of olive oil and the ground turkey. Generously, sprinkle the taco seasoning over the ground turkey and mix. I eye balled it. You should still have more than half of the packet left. Break the meat up with a spoon, stirring occasionally.
  • Once fully cooked add the salsa and mix.
  • Set the pan aside and add some chips to a 9×13 pan until covered and sprinkle some Colby cheese. Put in the oven under BROIL for about 2 min or until lightly toasted and cheese is melted.
  • Add some chips with the melted cheese on a plate. You could add the turkey on the side or on top of your chips. Sprinkle some pickled jalapeños, cheese and cilantro (optional). Serve with avocado and more salsa if desired.
