Pineapple Glazed Salmon

It is the end of the cold season and it has been the mildest winter yet. Because it has been so warm, the weather reminds me of the beginning of spring. Pineapples are in season and are super sweet and well, salmon is a must have in my home. My family and I have it at least once a week! I had a nice ripe pineapple. My husband had asked for mango salsa and salmon but I didn’t have any mangoes on hand. I wanted a nice warm dish but still tropical and sweet. Cooked pineapple it is! I ended up making pineapple glazed salmon!

Ingredients

  • 1 1/2 lb of Salmon

  • 1/4 tsp Salt

  • 1/8 tsp Pepper

  • 1/2 tsp Onion Powder

  • 1/2 tsp Garlic Powder

  • 1/4 tsp Red Pepper Flakes

  • 1/2 tsp Oregano Powder

  • 1 lime, squeezed juice

  • 1 Ripe Pineapple, cut into small pieces

  • A generous handful of cilantro, chopped

  • A clove of Garlic

  • 2 tbs of Olive Oil

  • 1/4 Cup of Water

Directions

  • Start off by turning your oven on HI, Broil. Drizzle 1tbs of olive oil (reserve the other 1tbs) on a sheet pan and place the salmon skin down on the sheet pan. Season the fish with the salt, pepper, onion powder, garlic powder, red pepper flakes and oregano powder.
  • Put the Salmon in the oven for about 15 minutes or until the top is nice and brown.
  • While the salmon is in the oven, take a frying pan, turn stove on HI and add the remaining 1tbs of olive oil. Once the oil is hot, add the light brown sugar and 1/4 cup of water.
  • Stir until it becomes bubbly and add the garlic, pineapple chunks, cilantro, juice of the lime and the 1/4 cup of water. The juices will start to evaporate quickly. You want to preserve the juices for the salmon. At this time lower the heat to Med HI and give it a few stirs. The pineapple is ready when it turns a bright, dark yellow.
  • Once your salmon is ready, remove from the oven and pour the pineapple glaze over the salmon and serve!

Notes

  • Each oven different, therefore, 15 minutes may or not be enough time to broil. Sometimes, when I make salmon, it can take longer if the cut I purchased is on the thicker side. The time is an estimate.

How to Prepare

I wanted a tropical meal. Therefore, I served mine with white rice and beans! It was super delicious! Of course you can always have it with a side vegetable or salad.
