Overview

I admit I don’t make this bacon wrapped shrimp with watermelon salad recipe enough. This dish looks and sounds fancy but is very simple to make. As long as you have sweet watermelon you are good to go! I don’t purchase it during the winter since it’s an out of season fruit. The few times I’ve given in I’ve gotten a tasteless watermelon. Definitely not worth buying.

How to Choose a Watermelon

When choosing a watermelon look for a yellow creamy color on the skin.. That means it’s ripe. The more yellow the better. Your watermelon should also feel heavy.

My Watermelon isn’t Sweet

If you have watermelon that isn’t sweet don’t let it go to waste! Blend the watermelon in your blender, strain and add some lime and sugar for a watermelon lime juice! Or omit the lime! Either way they both taste amazing!

The perfect summer dish to serve at your next BBQ party! Light and refreshing but filling.

Ingredients

  • 1/2 lb shrimp, tails removed

  • 8 slices of bacon, cut into 3 slices each

  • A small watermelon, cubed (or about 4 cups of watermelon)

  • 1/2 cup of cilantro, roughly chopped

  • 1/2 small onion, thinly sliced

  • 2 oz of Feta cheese

  • the juice of one lime

  • Salt

  • Pepper

  • 3 tbsp of olive oil

Directions

  • Season your shrimp with salt and pepper and wrap each shrimp with a piece of bacon. Bacon is flexible so you can wrap it around tightly.
  • Cook each side for a few minutes, until bacon is brown and cooked through. Set aside.
  • In a large bowl, mix the watermelon, cilantro, feta, onion, salt pepper, lime juice and olive oil. Give it a nice toss and serve with a few bacon wrapped shrimps!

This is a perfect salad for a summer night. This a light and refreshing salad. It is also perfect for your next BBQ party! You can omit the shrimp and just make the salad. Even easier!

Conclusion

When it comes to fruits you can make any salad. However, watermelon is overlooked in salads. Yet they make the best salads because watermelon are naturally juicy once cut. It isn’t like a strawberry or blueberry where you have to bite into the fruit for the juices to flow. The juice in watermelon give your dish a sweet and refreshing taste without adding extra flavors to your salad. Olive oil and a fresh squeezed lime give it the perfect salad dressing.
