Chocolate Peanut Butter Pancake Cereal

Blog #72: There is always a trend these days. From a new dance to new foods to try. I had to try the #pancakecereal trend. What is all the hype? Is it worth it? They are pancakes but made into mini versions. Some people are serving them with milk and maple syrup and most are enjoying them with just butter and maple syrup.

How to Make Mini Pancakes

How to make mini pancakes, you ask? Follow the directions to your pancake box mix and add in any of your favorite toppings. I usually add chocolate chips and cinnamon to my pancake batter. I decided to replace the cinnamon with peanut butter this time.

I stirred in a teaspoon of peanut butter and chopped some chocolate into the batter; as I was out of chocolate chips. Pour the batter into a zip lock bag and cut the tip. Pour small dollops of batter into your pan and flip once you see bubbles on your pancakes. That is as simple as it gets.

Serve them in a bowl with milk and syrup or eat your mini pancakes as you would with regular sized pancakes. Whether you like your pancakes served with butter, jam, syrup, whipped cream or just plain; the possibilities are endless! I personally stuck with syrup and some shaved chocolate. In my opinion, the milk was not worth trying as that would deliver soggy pancakes. This is also part of the trend, which is why it is called pancake cereal!

Mini vs Regular Sized Pancakes

To answer your question, no there is no real difference besides a crunchier taste with the mini version. That is because a smaller pancake will cook faster and get crispier edges vs a larger pancakes will have a softer cake like finish. My kids found them delicious because the eye is trained to enjoy anything mini. Just as we think puppies are so cute.

I did like the crispy texture and would not mind making these for on the go, to dip with syrup and it would also make fun brunch options. I only made enough for a serving but would say mini pancakes would take a few minutes longer to get more portions. Other than that enjoy your pancakes anyway you like!
