Blog #75: Trader Joe’s Chili Lime Seasoning goes well on all types of meats and fish. I’ve used it to make tacos and beef salad. Today I made a Shrimp, Avocado and Watermelon Salad using the Chili Lime Seasoning. Lately, I have been making lots of watermelon salads. They are the perfect summer salads and there are many different recipes you can make!

Two that I make regularly are the Bacon Wrapped Shrimp Watermelon Salad and the Shrimp and Watermelon Kale Salad. I am pretty much obsessed with watermelon salads at this point!

Taste

I was planning on making the bacon wrapped shrimp watermelon salad but then realized I ran out of feta cheese. I also wanted to use avocado and Trader Joe’s Chili Lime seasoning. That is when I decided to make a Chili Lime Shrimp, Avocado and Watermelon Salad!

This salad was simple to make, with ingredients I always have stocked at home. You could serve this dish as a main salad or as a side dish or appetizer. Today I made it as a main dish for my husband and I. Enough to serve 2. The shrimp marinated in the chili lime seasoning had a nice kick but not considered spicy. The avocado gave it a creamy texture. The watermelon and cherry tomatoes gave it juiciness along with the sweetness from the watermelon. The flavors paired very well together. Any type of onion will do. However, I wish I had a purple onion as it is sweeter and best when used raw for salads. It would have made the appearance a lot prettier, as well. Eat the colors of the rainbow!

Chili Lime Seasoning

I happen to shop regularly at Whole Foods. Every so often I stop by my local Trader Joe’s for something different. They always have great spices to try, that I don’t notice anywhere else. This Chili Lime seasoning has a blend of sea salt, chili peppers, red bell pepper powder and lime juice powder. You don’t need any other spices at this point!

Watermelon salads are SO delicious but the 2nd best part is that they are super easy to make and look like you took hours to make!

Creamy and sweet refreshing watermelon salad!

Ingredients

  • 1 lb of Shrimp, tails removed

  • About a 1 Tbps, Trader Joe’s Chili Lime Seasoning

  • 4 Tbsp of Olive oil

  • 2 1/2 Cups of Watermelon, diced

  • 1 Cup of Cherry Tomatoes, halved

  • 2 Avocados, diced

  • 1 Tbsp of Onion, Sliced

  • 1/2 Cup of Cilantro, chopped

  • Dressing
  • 1/2 Cup of Olive Oil

  • 1/2 Lemon, juiced

  • 1/2 Tsp Trader Joe’s Chili Lime Seasoning

Directions

  • Season the shrimp with the chili lime seasoning. Heat a skillet with 2 Tbsp of olive oil and add half the shrimp. Flip after about 3-4 minutes and cook the other side. Add the rest of the 2 Tbsp of olive oil and cook the rest of the shrimp. Reserve.
  • Mix the watermelon, cherry tomatoes, avocados, cilantro and onion;
  • Mix the dressing ingredients and mix into the salad;
  • Top with shrimp and serve!

Notes

  • Can be served as a side salad or appetizer
