Blog #76: How do you make white rice? White rice is super easy to make and I thought there was one way to make it until I read the directions on the rice bag.

Culture

My parents are Dominican. Therefore, culturally, I grew up eating rice every single day. Rice is a staple in many cultures. No, I did not get sick of it. It was white rice with beans or colored rice with meat and some type of salad. Very filling and delicious! I love rice and beans with pineapple glazed salmon! Love it!

Dominicans also eat more than the recommended portion. You can eat rice with anything. It goes well with beans, meat, fish and soups. In my culture we always use long grain rice. It makes a nice firm rice and not sticky.

Today, I don’t eat rice everyday. I cook a variety of different meals that consist of lots of chicken, fish and vegetables!

Rinse?

Should you rinse your rice? I was taught to always rinse rice before cooking. Over the years I’ve stopped rinsing my rice. Depending on the brand that is. It all depends on the quality of the rice. Canilla rice and any organic rice hold its standard to good quality rice. You will notice the difference right away. I purchased long grain rice from Target the other day and noticed the rice was mostly crumbs and pieces of what looked like rocks.

Rinsing also gets rid of the starch, just like potatoes. Yet, I’ve noticed if it is good quality rice, it doesn’t stick. The difference is in how much water you add to the pan. If your looking to make sushi rice then feel free to add more water. You will then get sticky rice. It will give you the consistency of short grain rice.

Con Con

What is con con? Dominicans call the crunchy rice at the bottom of the pan, con con. You can serve it with whatever you are having with your rice. It is very good. Nothing goes to waste!

Dominican Foods

Besides white rice, a few other popular dishes that are delicious are pastelitos, also known as empanadas or turnovers and Mangu with fried cheese.

Dominican food is very flavorful with many nutrients. However, many of the foods are fried. Therefore, I don’t make these foods all the time and the ones I do, I modify them to make them healthier.
