Blog #77: Who doesn’t love pineapples? They are juicy and sweet! You can have pineapple freshly cut, cooked in a dish, in baked goods and as pineapple salsa!

Benefits

Pineapples have many benefits. From antioxidants that help with inflammation and diseases, such as heart disease, diabetes and eye problems. They are also high in melatonin numbers, which help you fall asleep faster. What an awesome snack to have before bedtime! ?

Is my pineapple ripe?

We always see the nice yellow pineapple with the green tops but just like a banana, yellow does not mean ripe.

There are 2 ways to see if your pineapple is ripe.

  1. The browner the leaves and the body of the pineapple are, the sweeter it will taste;
  2. If you can twist the top of easily then it is ripe.

Basically, the less appealing your pineapple is the sweeter and juicier it will taste!

Pineapple Salsa

I’ve always loved pineapples but became obsessed with pineapples when I was pregnant with my third son. I craved fruits and vegetables. Amazing right! I would go shopping and made sure I purchased extra fruits and vegetables for myself as chicken was beyond nauseating during my second trimester. I once ate a whole pineapple by myself!

Once my sister in law gave me her delicious mango salsa recipe, I was hooked on trying new salsas with fruit. Pineapple salsa is delicious and can easily serve a crowd! It goes well served as a topping on fish or chicken or with tortilla chips on a summer night!

You can use half a pineapple or the whole thing and still have leftovers if serving 4 people.

Juicy Pineapple Salsa

Ingredients

  • 1 ripe pineapple, diced

  • 2 cups of peppers, diced (red, orange and/or yellow)

  • 1/4 cup of onion, diced (red or yellow)

  • 1/2 cup of cilantro, roughly chopped

  • 3 Tbsp of Olive Oil

  • Salt

  • Pepper

  • 1 Lime, juiced

Directions

  • Take your diced pineapple, peppers, onions, cilantro and mix;
  • Add the oil, lime juice and mix;
  • Lastly add salt and pepper to your liking. I added a pinch of each.
  • Serve!

Notes

  • serve with tortilla chips
  • serve over salmon or chicken
