Blog #82: Tonight I made Tilapia with a greek salad. You may have noticed by now that I love making fish. It’s so versatile, healthy and so easy to make. I make fish at least once or twice a week in my home. Many people think making fish dinners take a long time to prepare but the reality is that it is a lot quicker than cooking meat!
I bought all my ingredients at Whole Foods for about $20. Think about it, for $20 dollars you can feed yourself and your partner! If you order take out, you have to leave a tip and each meal would cost about $17-$20. You are saving a significant amount of money. This meal only took about 25 minutes. Take out/Delivery would take about 40 minutes. Give it a shot and try making this dish. You will not regret it!
Tilapia is a bland fish, just like cod. Therefore, it is important that it is well seasoned. Tilapia goes well in tacos and also served with pineapple salsa and a side of rice. Because it is such a bland fish, it is easy to experiment with your own flavors! Whatever you have on hand works.
Other options for taste, is you could marinate the fish in your favorite dressing or try a dry rub. I have made tilapia with Trader Joe’s Chili Lime Seasoning and served it with an oil and vinegar vinaigrette. You can also serve it with a creamy dressing. To make things even easier, buy premade salads. Premade salad are ready to be served and come packaged with the dressing and toppings. My husband loves chicken and salad for breakfast and premade salads save me more time in the morning!

Inexpensive lunch or dinner for two. $20 dollar meal at home vs. $40 for take out!
2 Pieces of Tilapia
1 Whole Boston Bib lettuce, chopped
2 sprigs of oregano
1 cup of cherry tomatoes, halved
1/2 cup of Black Pepper Feta Cheese*
1/4 cup of red onion, thinly sliced
1 cup of pitted black olives, halved
1 scallion, sliced thinly (optional)
- Turn your oven on HI Broil. Season your tilapia with salt and pepper on both sides;
- Drizzle some oil on a sheet pan and add the tilapia. Broil for about 12-15 minutes.
- While the fish is broiling, prepare salad. Wash the lettuce, oregano and tomato. Rinse and toss in the red onion, olives, feta, and tomatoes. Drizzle oil, a pinch of salt and half the lime. Note: Only add pepper if you are using regular feta cheese.
- Split salad onto 2 plates and add a piece of tilapia to each. Lastly, use the other half of the lime to drizzle over the fish.
- Top off with scallions (optional)
- *If you can’t find Black pepper Feta cheese use regular feta cheese and add pepper to the salad
