Pizza Muffins for School Lunch

Blog #130: Due to the pandemic I can no longer send a lunch box container to school on the days my kids do attend school. I have to now be extra creative with food. Everything has to be packed in disposable bags, such as paper bags and plastic baggies. Sandwiches everyday is not doable. Probably because we do not eat sandwiches everyday at home! Pizza muffins for school lunch sounded like a great idea. The boys really love pizza and I mean very few people dislike pizza. Okay, I have met two people who don’t like pizza. Can you believe it! Naan pizza are delicious but changing it up makes it more appealing than having the same style of pizza often.

What are Pizza Muffins?

Fridays are usually pizza night for us. I was working on my grocery list when my son asked me if I could buy Digiorno’s Frozen Pizza. For some reason he think’s it’s the best pizza. Personally Coal Oven style pizza is the best! Digiorno’s is a once in a blue treat. I mean the amount of sodium is quite frightening. Instead of saying no, I told him I would make Naan pizzas. However, the naan were all sold out. Which is when I decided to buy pizza dough and the idea of pizza muffins popped in my head!

Pizza muffins would be easy to put in baggies. I feel awful, with all the plastic bags I am now using to send for school lunches. A sandwich bag for the pretzels, another for carrots and then a sandwich. I sure miss using the bento boxes. No more foods in the thermos, for now, anyway. Sorry to the environment!

How EASY is it?

How easy is it? Super easy to make and not very messy at all. Take your favorite pizza dough, roll it out on some flour, add your favorite pasta sauce, cheese and favorite toppings and roll! I made half cheese and half pepperoni. I was hoping to get 12 slices but got 11 instead. Bake for 23 minutes or until the tops are lightly browned.

You will need:
  • pizza dough
  • pasta sauce
  • pizza blend or mozzarella cheese, shredded
  • Italian seasoning
  • your favorite toppings

Lunch and Snack

In addition to making these for school lunches they make a great after school snack. Especially when you are running out the door for after school activities and sports! It was also an easy meal for my little one and myself!

Pizza Muffins for School Lunch

Ingredients

  • 11 oz of pizza dough (a little over .5 lb), I used pillsbury thin crust pizza dough

  • 6 oz of pizza blend or mozzarella cheese, shredded

  • 4 – 5 tbs of pasta sauce

  • 1/4 tsp of Italian seasoning

  • 1/4-1/2 cup of Pepperoni slices or other toppings (I made half cheese and half pepperoni)

  • 1/2 cup of flour

  • 1 tsp of water

Directions

  • Preheat oven to 350 degrees.
  • Sprinkle some flour on a large cutting board and roll out your pizza dough.
  • Spread pasta sauce with a spoon and sprinkle Italian seasoning.
  • Sprinkle cheese and add desired toppings, optional
  • Roll dough into a log (the long way for more slices). Wet your finger and seal the edges.
  • Cut into 11-12 slices and stick into muffin tins.
  • Bake for 23 minutes or until tops are lightly toasted.
  • Cool completely and serve.

Notes

  • If you are adding toppings, other than pepperoni make sure to cut them into bit size pieces. It will be easier to roll and keep your dough together.

School lunches just keep getting more and more challenging. First making nut free lunches and now packing lunches in baggies! I’d love to hear new lunch ideas for school! Please share ?

  1. I LOVE this idea! Our make-lunch-great ideas from those years ago are such happy, satisfying memories and this would have fit in PERFECTLY. Yay you for dreaming up such a good solution. As for the bags, I like waxed paper (which even comes in premade bags from Reynolds) and paper lunch sacks for one-time use. As always, great post! 🙂
