3 Ingredient Pumpkin Spice Pecans

What equals fall foods? Pumpkin spice, of course. You see it on the commercials and on many blogs. I too am obsessed with pumpkin spice everything! My husband loves spiced nuts. One of our favorites is the Habanero BBQ Almonds, which are sold everywhere, including your local Walgreens. To celebrate fall, I decided to make pumpkin spice pecans. It was delicious and simple to make, with only 3 ingredients!

Pumpkin Spice

This recipe is really just 3 ingredients if you have pumpkin spice on hand. You can either purchase it or make your own, as I did. Most of us have these ingredients in our pantry already! Find the link HERE. All you need is cinnamon, ginger, cloves and nutmeg. There are some different variations on how to make this spice, of course.

How to Make Pumpkin Spice Pecans?

You will need:

  • pecans
  • pumpkin spice
  • salt
  • sugar

Preheat oven to 300 degrees. Boil some water and add pecans. Bring to a boil and remove from heat. Drain well, using a strainer and put pecans back in sauce pan. Mix together the pumpkin spice, salt and sugar and incorporate well with the pecans. Transfer pecan mixture to a baking sheet.

Make sure to use parchment paper when baking, as the nuts will get sticky. Bake for 30 minutes, stirring after 15 minutes. Let the pecans cool for at least 15 minutes, before serving. I must say I enjoyed the pecans the very next day. They were absolutely delicious, sweet and sticky. YUM! It was a perfect amount of ingredients without over doing the spice, salt or sugar.

Serve as…

This a perfect snack or even appetizer. I wanted to try this out as I plan on making goodies to gift for the holidays. I plan to make more than I usually do for the holidays because of social distancing and not being able to celebrate with others.

12 oz of pecans makes about 2 cups. They are great to gift in mason jars and also make an easy on the go snack that is pretty filling. I will say you only need a large handful to get full.

These spiced pecan are good for up to 5 days but no worries, they won’t even last 24 hours at home. I made them at night and had them the next day. They were gone within a few hours!

Lastly…

As I mentioned before, make sure to cool the pecans before serving. When you remove them from the oven, they will look wet. They need time to cool off. In my experience, it is best to cool for a few hours before serving; 15 minutes at the most. Let the spices stick to the pecans. I love the stickiness of the nuts. It makes it extra yummy and you can tell it is homemade!

Ingredients

  • 12 oz of pecans

  • 1/3 cup of sugar

  • 1 tsp of salt

  • 1 tbsp of pumpkin spice

Directions

  • Preheat oven to 300 degrees. While the oven preheats, combine the sugar, salt and pumpkin spice in a bowl. Set aside.
  • Bring a saucepan of water to a boil. Add the pecans and bring back to a boil; for a few minutes. Drain water well, using a strainer. Dump the pecans back in the pan and stir in the pumpkin spice mixture. Incorporate and spread the pecans on a cookie sheet. *Use parchment, as the pecans will be sticky.
  • Bake pecans for 30 minutes, stirring once after 15 minutes.
  • Remove from oven and let cool.*

Notes

  • Cool for at least 15 minutes. Pecans will look a bit wet, fresh out of the oven.
  • Use within 5 days.

  1. So unusual! The moment the recipe said to put the pecans in boiling water I stopped reading. I’ve made candied pecans for years but never with boiling water. But then, knowing you by now, I kept on and discovered what must be a delicious treat. Hmmm … I do have pecans on hand … (!) 🙂 You always post such delicious recipes Azilde.
