Chocolate Pumpkin Spice Bread (Super Moist)

Lately most of my posts have been Pumpkin spice inspired recipes. After the holidays, I probably wont use it as much. December is more peppermint and chocolates for me. However, I will be gifting pretty jars of 3 Ingredient Pumpkin Spice Pecans for Christmas. I am also going to make breads, like this chocolate pumpkin spice bread.

This is take 2 on making this chocolate pumpkin spice bread. The first time I made, it came out really dense and the bread rose too much. The chocolate was also overpowering. This time around it came out super moist, with a hint of pumpkin spice. I halved the cocoa powder and used less flour. Using pumpkin is the secret ingredient to a super moist cake in this recipe.

Using Pumpkin Spice and Chocolate

In order to get both flavors, I needed just enough of pumpkin spice and chocolate to not have either ingredient overpower one another, as was the case when I first baked this bread. All I can say is this bread came out super delicious, with a hint of spice! As I am writing this, I am having another slice of bread! LOL With one can of pumpkin puree you can make 2 breads! Make one for yourself and gift another for thanksgiving or Christmas.

Baking for the Holidays

You may have noticed more baked goods on my blog lately but this is the time of year when I do most of the baking. I consider myself a cook but have been wanting to learn to become a baker for a while now. During this time of year is the perfect excuse to bake without feeling too guilty. Of course, I enjoy sweets but its not something I do not keep at home. During the summer we do have more ice cream than usual and throughout the year I keep chocolate chips in my freezer. My family and I indulge in chocolate chips when we need some chocolate.

Baking for the holidays is fun and even more fun is baking for others. Food brings everyone together. I just love it!

Chocolate Pumpkin Spice Bread (Super Moist)

Ingredients

  • 1 1/4 cup of all purpose flour

  • 1/4 cup of unsweetened cocoa powder

  • 1 tsp of pumpkin spice

  • 1 tsp of baking soda

  • 1 tsp of baking powder

  • 1/4 tsp of salt

  • 1 cup of pumpkin puree

  • 1/2 cup of olive oil

  • 2 eggs

  • 1 cup of sugar

  • butter (to butter pan)

Directions

  • Preheat oven to 350 degrees. Sift the flour, baking powder, baking soda, pumpkin spice, salt and cocoa powder into a bowl.
  • Add in the pumpkin puree, oil, eggs and sugar. Mix ingredients with a hand mixer.
  • Butter 9×5 loaf pan and add batter. Bake for 50 minutes or until toothpick comes out clean.
  • Let cool and enjoy!
