Winter holidays come with heavy meals. That is why fish is a good option. A fish you don’t have quite often. The new year is here. Why not start off with a healthy meal to celebrate! I had wanted snapper for quite some time. When I called my local Whole Foods they told me they had 10 lbs of snapper in stock and that I should reserve the amount I wanted for pick up. I purchased 3 lbs and had it cleaned and filleted. My plan was to make snapper with pineapple salsa. This dish took me a total of 24 minutes, including the pineapple salsa. While the snapper was cooking, I made the salsa.

Snapper is hard to come by in my area. After all it is a summer fish. There have been a few times I have noticed snapper at my local grocery store but never when I had a meal planned for it. It is on the pricier side, as snapper season is very short. Snapper is definitely something you should have at least once a year. It is finger licking good! On top of being delicious, it is high in protein and a good source of vitamin D and E.

Snapper is a mild, white fish. The texture is a bit different than cod. Much nicer like salmon. It cooks easy and you can season it with just about anything. I went with a simple seasoning, as the main ingredient would be the pineapple salsa.

Pineapple Salsa

Pineapples are easy to find in store, year round, for a tropical fruit. It’s such a wonderful fruit to have year round. There have been a handful of times where I can say my pineapple was not good to eat. The trick is to wait about a week after purchasing to eat. You want a ripe pineapple. Once the leaves turn brown and the pineapple is no longer cute to look at, it is ripe! Twist the top OFF EASILY and cut. With my last pregnancy, I craved pineapple. I remember eating a whole pineapple to myself! LOVE IT!

What you will need:

  • snapper
  • lime
  • salt
  • pepper
  • dried cilantro
  • onion powder
  • olive oil or cooking spray
  • unsalted butter

A light meal full of protein, yet delicious and filling! Serve this for new year’s to start off the year healthy!

Ingredients

  • 3 lbs of snapper, fillet (4 pieces)

  • 1/2 tbsp of dried cilantro

  • 1/4 tsp of onion powder

  • Salt

  • Pepper

  • 1 lime, cut into 4 wedges

  • 1-2 tbsp of olive oil or cooking spray

  • 1/2 tbsp of unsalted butter, cut into 4 pieces

  • PINEAPPLE SALSA

Directions

  • Turn oven on to HI BROIL. Take a sheet pan and spray it with cooking spray or brush with olive oil. Set aside.
  • In a small bowl, mix the dried cilantro, onion powder, salt and pepper (add enough salt and pepper to your liking).
  • Season both sides of each fillet and set on sheet pan. Squeeze to lime wedges on the fish. Cook for 13 minutes.
  • Add a piece of butter to each snapper fillet and cook another minute. Snapper is cooked when it flakes, when pierced with fork.

  2. I always think of Snapper as having lots of small bones making it hard to eat. Maybe I will give it another go. We have been enjoying Sea Bream this season. Meatier than sea bass. Delicious. I love salsas. I often prepare a mango one but will go for pineapple next time. I love your recipe and meal ideas as you introduce me to new things. Happy new year!
