Healthy Coconut Peanut Butter Balls (6 Ingredients)

My posts this week will be all about healthiness. Since the holidays are over, it is hard to stop those sweet cravings. I love making protein balls since they are filling and healthy. You never have to OVER indulge with these. My favorite are the Protein Granola Balls Dipped in Chocolate. To make it healthier, you can omit the dipped in chocolate part. Now I did not have ANY chocolate, but had a few things, such as the dried figs. The figs I don’t use much, except to make cranberry sauce for Thanksgiving. Instead of letting the figs go to waste, I decided to make healthy coconut peanut butter balls. Only 6 ingredients!

These healthy coconut peanut butter balls were quite easy to make. There were some changes I had to make, as I eyeballed this recipe, based on what I had on hand. This was when I needed to go grocery shopping and needed a sweet! I always keep chocolate chips in my freezer when I need a sweet other than fruit. But of course, I ran out. The sweetness in the coconut peanut butter balls came from the dried figs. It was just the right touch of sweetness without over powering the rest of the ingredients.

Substitutions

I used brown rice krispies but regular rice krispies works, just as well. Feel free to substitute the peanut butter for your favorite nut butter, such as, almond or cashew butter. You can also use dried dates instead of dried figs.

Ingredients

  • brown rice krispies or regular rice krispies
  • peanut butter
  • maple syrup
  • dried figs
  • unsweetened coconut flakes
  • coconut oil

Here Is a Tip

I had about 3 cups of brown rice krispies but only needed 2 cups. Because of this, when I was mixing the peanut butter mixture with the rice krispies, it was a bit dry. Whenever this happens, mix what will stick or add more of the peanut butter mixture to the rice krispies. I was able to make 12 balls but if I had doubled the “wet” ingredients, 3 cups would have worked wonderful. However, I used what I had left of the peanut butter, which was 1/2 a cup. Yes, we eat lots of peanut butter at home!

This recipe is definitely kid friendly and super easy to make, with just 6 ingredients! I did not even put them in the fridge to harden. I kept what was left in a jar for the next day. However, they were gone within a few hours!

Easy healthy snacks made in a pinch of time! Made with only 6 ingredients and kid friendly!

Ingredients

  • 2 cups of brown rice krispies or regular rice krispies

  • 3/4 cup of unsweetened coconut flakes

  • 1 cup of dried figs, chopped small

  • 1/2 cup of peanut butter

  • 1/3 cup of maple syrup

  • 2 tbsp of coconut oil

Directions

  • In a large bowl add your rice krispies, coconut flakes and dried figs.
  • In a sauce plan, heat up the peanut butter, maple syrup and coconut oil. This will take a minute or two. Once everything is incorporated pour the mixture into the rice krispies bowl.
  • Make sure to mix in immediately, while the peanut butter mixture is warm and easy to mix.
  • With your clean hands, form 12 balls. You may make more if you form smaller balls.
  • Serve!
