It is always fun to make sweets for the kids during any holiday. During February, there are already enough sweets due to Valentine’s day and both my son and husband’s birthday. March comes around, which means spring is almost here! Even though I LOVE anything chocolate, I think of rainbows for St. Patrick’s day. A fun idea to make with your kids or yourself is a St. Patrick’s Day Rainbow Fruit Platter! We eat tons of fruit in my home and turning fruit into a rainbow is even more fun!
St. Patrick’s Day
St. Patrick’s Day is a religious holiday celebrated by the Irish. It has come to be a celebration for many here in the United States. My husband is half Irish and so I like to teach my children where they come from. Making something together and teaching them about their multiracial background is always fun! Everyone is different when it comes to language, culture and food!
For St. Patrick’s I like to make it a bit healthier and go with the fruit. I do add marshmallows to this St. Patrick’s day rainbow fruit platter but it is very minimal. The mini marshmallows represent the clouds and the gold coins are actually chocolate. Yes, a bit of chocolate at the end of the rainbow! The kids love the rainbow and eat all the fruit. It is so much fun!
Fruits to Use
You can use a variety of fruits. For my fruit platter, I used strawberries, cantaloupe, banana slices, kiwi and blueberries. I could have also used raspberries, oranges, mangoes, pineapple, blueberries, green apples and grapes. There are so many different possibilities. Use whatever you have!
Make a Vegetable Platter
As I am writing this I thought of a vegetable rainbow platter! You can use radishes, carrots, yellow and green squash, broccoli, cooked beets, green beans, avocado and more!
