5 Burrito Bowls to Make This Week

Burrito bowls are delicious and you can add whatever you’d like to create your own! Best of all, you can skip the extra calories by skipping the tortilla or taco shell. Tacos are easy to make but burritos are just as easy! It’s mid week and I am already planning my next meals for the week and thought I’d share with you what I plan on making. Here are 5 burrito bowls to make this week!

Everything But the ELOTE

Here is the link to my everything but the ELOTE burrito bowl recipe. I used beef, seasoned with everything but the ELOTE seasoning, corn, farro, cilantro, cheddar cheese, jalapeños, onions, peppers and sour cream. The beef is already a heavier meal and so I made this dish with farro instead of rice for a healthier take!

Shrimp is beyond easy to make and is one of those seafood dishes most people enjoy. For this recipe, I used chili lime seasoning for my shrimp. I cooked it for 3-4 minutes per side and served it with rice, corn (also seasoned with chili lime), cilantro, cheddar cheese, avocado slices and red onions. A splash of lime and it is ready to eat!

Veggie Burrito Bowl

Vegetable burrito bowls are one of my favorites. Homemade that is! Pictured above is a veggie bowl. This was easy, as all I did was roast the sweet potatoes. The rest of the vegetables are raw. For this bowl, I used arugula, cucumber slices, cherry tomatoes, black beans, avocado, cheddar cheese and of course, the sweet potatoes. I seasoned the dish with salt and pepper. Drizzled some olive oil and squeezed some fresh lime juice.

Chicken Bowl on the go

For this meal, I made grilled chicken and served it with romaine lettuce, farro, roasted carrots, red onions and baby cucumbers. To give this dish extra flavor, I served it with my chili honey dressing.

This isn’t the traditional burrito bowl, but again, you can make your bowl however you’d like! Here I used marinated teriyaki steak, sauteed with yellow peppers for some color. I served it with some sauteed snap peas.

Make It Your Way!

When we think of burrito bowls, we think of cheese and rice, as you would make a taco. However, it is really a mixture of your favorite foods in one bowl! For a refreshing take, add cucumbers and other raw vegetables. Sprinkle cheese or completely leave it out. Whatever you like is what makes it your own custom made burrito bowl!
