Breakfast Sardines is not a common thing in most households. However, I grew up eating sardines for breakfast. It is super filling and nutritious. On top of that, it tastes so good! Sardines are not only nutritious but also super inexpensive and super easy to make. You can buy sardines in water, oil or tomato sauce for less than $3.00 for a 4.4 oz can. A can serves 2 adults or 1 adult and 2 children.

Sardines for Breakfast?

When you are tired of having eggs, oatmeal, cream of wheat, yogurt, fruit, smoothies, toast or cereal, what do you have for breakfast? There are many options but on days you want a very filling breakfast, sardines is a must try. I saute onions and peppers to add to my sardines with tomato sauce. Season with some salt, pepper and onion powder and a splash for vinegar and you got yourself a nice breakfast. Of course I need a side, which I boil plantains (sweet or green) or yucca. Add a few slices of avocado and a splash of lime or lemon and your good to go. Sometimes I even add some hot sauce.

My kids are still not a fan of sardines but I am sure they will come around to liking it. I guess it looks like an adult meal and not kid friendly. That was one of my favorite breakfasts’ as a kid, I admit! My palate as a child was very different from other children. Very few times did I order from the kids menu at restaurants. I always went for the adult size meal because of the many meal options!

What You Need:

  • A can of sardines, in water, oil or tomato sauce
  • tomato sauce (disregard, if sardines are in tomato sauce)
  • peppers
  • onions
  • salt
  • pepper
  • onion powder
  • cooking spray

Sardines is the perfect meal to have for breakfast! Filling and nutritious!

Ingredients

  • 4.4 oz of sardines, in water, oil or tomato sauce

  • 8 oz of tomato sauce (omit if using sardines in tomato sauce)

  • 1 small onion, cut into slices

  • 1 pepper (any color), cut into slices

  • 1/4 tsp onion powder

  • salt

  • pepper

  • splash of vinegar

  • cooking spray or a tbsp of olive oil (or your oil of choice)

Directions

  • Carefully open can of sardines. Easy but messy. Cut sardines in half and remove bones. If sardines in tomato sauce, reserve sauce. Turn burner on MED HI. Spray your frying pan with cooking spray or add oil once pan is hot. Add sliced onions and peppers.
  • Saute onions and peppers to your liking. Sometimes I cook them just enough to keep the crunch and sometimes until onion becomes translucent. After about 3-4 minutes, add sardines and tomato sauce. Also add the onion powder, a splash of vinegar and season with salt and pepper.
  • Lower the heat to MED and cook for another 3 minutes, until the tomato sauce evaporates a little.
  • Serve with plantains, yucca or roasted potatoes and add some avocado!
