June, hot days and hotter days to come! A perfect time to make an easy strawberry salad for those hot days! Strawberries are of abundance in June, since it is strawberry picking month. Because they are in abundance, also means there are super great deals at the super markets. No more paying $7 for strawberries. $3.49 is a much reasonable price.

Strawberry Picking

Strawberry picking is from early June to mid July. I prefer to go as early as possible due to how hot the weather gets, once its noontime. Bring the whole family and enjoy a day of picking fresh strawberries. There are so many recipes to make with all those strawberries! Don’t let them go to waste! Because strawberries only last a few days, plan ahead before going strawberry picking. Plan out some desserts and this strawberry salad recipe! Make strawberry jam, homemade ice cream and freeze the extras to use in your smoothies!

Strawberry Salad

We typically think of vegetable salads but fruits are great to make salads with. Especially in the hot summer months. This strawberry salad was super easy to make and not many ingredients needed. A pound (16 oz) of strawberries makes enough salad to serve 2. However, it is very easy to double this salad. Serve it as a side salad or triple it to serve at your next BBQ! On top of being a delicious salad the whole salad is 280 calories! You could really eat this whole salad and still be under calories! Yet, this is a light salad. I recommend adding some protein for a filling meal.

You Will Need:

  • fresh strawberries
  • celery
  • red onion
  • basil
  • lime
  • salt
  • pepper
  • mayo

Serve With:

Serve this easy strawberry salad with chicken, steak or seafood. I served mine with scallops. This is such a juicy and fresh salad that it will go great as a side with your main meal. Something easy to wash down with all the burgers and hot dogs that are served at cookouts.

A light, fresh and juicy salad to enjoy during the summer months! Hello strawberries!

Ingredients

  • 1 lb (16 oz) of strawberries, cut in fours

  • 1 celery stalk, cut lengthwise and then into larger pieces

  • 1/4 cup of red onion, roughly chopped

  • A large bunch of basil, roughly chopped

  • 2 tbsp of a lime or lime juice

  • 1 tbsp of mayo

  • salt

  • pepper

Directions

  • In a large bowl mix in the strawberries, celery, red onion and basil.
  • Add the lime juice, mayo and season with salt and pepper.
  • Serve!

Notes

  • Serve as a side salad or add some protein to make it filling. Leftovers can be saved in the fridge for up to 2 days (given the strawberries are fresh)
