Kid Friendly Taco Tortellini Recipe

The first time I made taco tortellini was on pure accident. I really wanted tacos but did not have the necessary ingredients. I did have tortellini and taco seasoning, though. This taco tortellini recipe is kid friendly, meatless and easy to make!

Taco Tortellini

I realized later on, taco tortellini is a thing and there a few different ways to make it. I make a pretty simple version, with not many ingredients. Which makes this a perfect, easy and kid friendly meal.

You can of course add ground beef or turkey for this tortellini recipe. However, I made this meatless with just the taco flavor. This meal took just 14 minutes to make, including prep time!

All You Need Is:
  • tortellini or ravioli
  • cherry tomatoes
  • low sodium taco seasoning or make your own
  • pasta sauce
  • parmesan cheese
  • cilantro (optional)
Prep and Cook Time

There isn’t much prep to this meal, other than washing your tomatoes (if adding) and cutting them in half. And of course shredding your cheese.

Boil the tortellini or ravioli, per instructions. About 7 minutes for al dente. Drain the water, add the taco seasoning and incorporate with the tortellini. Then add the parmesan cheese, mix, add the pasta sauce and tomatoes. Mix everything together and serve! Top with parmesan cheese and cilantro for garnish or extra if you really love cilantro like I do!

Weeknight Meal

This is a perfect meal for those busy school nights. You don’t have to worry about cooking meat and waiting 3o minutes for a meal. Most school nights can be exhausting. School, after school activities, showers, homework and dinner. Definitely not enough hours in the day. The best part of this meal is, there is not much prepping!

The perfect weeknight meal for you and your kiddos!

Ingredients

  • 8 oz of tortellini or ravioli

  • 1 tbsp of taco seasoning, low sodium preferred

  • 1 cup of pasta sauce

  • 1/4 cup of cherry tomatoes, halved

  • 2 tbsp of parmesan cheese, shredded + more for serving

  • cilantro for garnish (optional)

Directions

  • In a pot, boil tortellini for about 7 minutes or until al dente. Drain the water and add the taco seasoning. Mix the tortellini and seasoning to incorporate.
  • Next add the cheese and mix the tortellini with cheese. Add the pasta sauce and tomatoes. Mix everything together and serve!
  • Top with extra parmesan cheese and cilantro for garnish.
