Blog #108: Chicken can become boring especially when you have it most days of the week. Chicken is versatile and you can serve it in so many ways. One of my go to meals is corn salsa served over grilled chicken thighs. It is simple and super tasty. If you read my blogs you may have noticed a pattern here. EASY and SIMPLE meals with TONS of flavor. That’s my motto.

Who doesn’t love corn? Especially kids. Their first favorite fruit is usually bananas and corn for vegetables. Hmmm I wonder why…HA The fact that this recipe is so yummy with just a few ingredients will blow your mind.

Corn is sweet and starchy which will keep you full longer. It also has many benefits, such as helping promote eye health and many minerals like magnesium. Eating corn is an easy way to get magnesium as 50% of adults are magnesium deficient.

Ingredients:

Substitutions:

If you don’t have cilantro or don’t like it you can use parsley instead. And you also can omit the garlic and onion powder, if you don’t have it on hand. Make the dish your own by substituting things you don’t have or just don’t like. However, I assure you you will love this corn salsa! Cilantro, lime and parmesan cheese are a great combo with delicious flavor. I use these 3 ingredients in many dishes.

Leftovers:

If you have leftovers, serve this corn salsa in a burrito bowl, taco or with tortilla chips. My favorite way to serve this corn salsa is with chicken thighs and white rice. Chicken thighs already have so much flavor. Even if you overcook them a bit, they stay juicy unlike chicken breast.
