Sure, salads are easy to make. But making the same salads over and over can get pretty boring. You want to elevate your palate to actually enjoy what your eating. Some salads I repeat but many times, I come up with new salads, more often. Whether I came up with a new idea or just using leftover vegetables to make a salad. I was thinking of what to call this salad. Besides the color orange, we have the colors of the rainbow in this salad. I decided on calling it the Rainbow Roasted Vegetable Salad. Here we have red peppers and red onions. The onions look purple. Not sure where red comes in! Then there is broccolini and kale, corn and chickpeas and lastly, the blue cheese. This salad was so filling and so good! I went shopping for the ingredients for a second time. On my list for dinner this week, AGAIN!

I made a cilantro sauce marinated in chicken and mixed the sauce into a corn orzo salad. Cilantro by far is my favorite herb. I use it on just about every dish. If a dish calls for basil or parsley I end up using cilantro. Why? Because I always have it stocked. I can't live without it. Three things I always have in my kitchen is cilantro, lemons or limes and fresh parmesan cheese. Must haves, to make any dish!
