Potato skins are pretty popular as appetizers at restaurants. Yet, I have never had one at a restaurant. For some reason they don't look as good as making them homemade. My husband and I challenged ourselves to just eating seafood for 2 weeks. Meaning no meat of any kind. I make my potato skins with bacon, therefore, I decided to make appetizer cajun shrimp potato skins since bacon was not an option this time.
Avocados are so creamy and full of healthy fats. I haven't made avocado dressing with cilantro and lime in a while. I serve it many different ways. However, this morning I really wanted avocado dressing for breakfast. It only takes 5 minutes to make and my avocados were already ripe. Why not! Avocados are especially great to have when you want a filling meal. Many times I have eggs and avocado for breakfast with fruit. I don't care to have toast with eggs most of the time.
Since getting back from vacation and moving a week after, I haven't been interested in cooking much. I mean there has been a lot going on, including officially sleep training and night weaning my son! I'll get back into the swing of things! For lunch I made an easy vegetable platter. This was the perfect light lunch and not much cooking required!
One of favorite marinated olives is made with garlic, parmesan and lemon juice. If you've never tried marinated olives, you must! Olives are so delicious. I can easily eat them by the jar. In fact, I have on many occasions. During my first pregnancy that was one of cravings. I love olives!! Do you like marinated olives? Most of us don't think to make marinated olives because we can easily purchase them in store and secondly, we don't think to marinate them unless there is an occasion for celebration. I do admit, I fall into these two categories.
