Olives Marinated in Garlic

One of favorite marinated olives is made with garlic, parmesan and lemon juice. If you’ve never tried marinated olives, you must! Olives are so delicious. I can easily eat them by the jar. In fact, I have on many occasions. During my first pregnancy that was one of cravings. I love olives!! Do you like marinated olives? Most of us don’t think to make marinated olives because we can easily purchase them in store and secondly, we don’t think to marinate them unless there is an occasion for celebration. I do admit, I fall into these two categories.

Benefits

There are many benefits to eating olives. To name a few:

  • They are heart healthy
  • Can improve circulation
  • Anti-inflammatory
  • May help lower risks of bone fractures in the elderly
  • Can help lower blood sugars
  • Can improve brain health

If you are on a low salt diet, do eat green olives in moderation, as they are high in sodium due to being brined or stored in saltwater.

Olives

There are a number of different varieties of olives, from pitted to not pitted. Then there are green and black olives, There are at least 26 varieties of olives. I can tell the difference when I am shopping for olives to make a certain dish. The Gordal is one of my favorites as it has a soft skin and is super salty. My favorite brand is Goya. Maybe because I grew up on this brand and because they are easy to find at any local grocery store. They also sell the olive and caper combo which I love. I have not seen this with other brands.

Store Bought

This all started when I purchased cracked pepper marinated olives. They looked good but were packed in olive oil. Taking a bite of one olive was like drinking a spoon of thick oil. It was not pleasing. Instead of throwing away the olives I emptied out the oil and rinsed them very well. It was a very easy fix!

Ingredients for Marinated Olives

For this recipe all you need is:

  • Olives, pitted or not
  • Fresh Garlic
  • Lemon
  • Parmesan Cheese
  • Pepper

Ingredients

  • 1/2 lb of green olives, pitted or not

  • 1/2 lemon, squeezed

  • 1 tbsp of parmesan cheese, shredded thinly

  • 4 cloves of garlic, minced

  • 1/4 tsp of pepper

Directions

  • Mix the olives, lemon juice, parmesan cheese, garlic and pepper
  • Marinate in fridge for 30 minutes
  • Serve!

  1. ooo I didn’t know there were many benefits to eating olives! I love em, but assumed they were unhealthy because they’re yummy. We have three olive trees in our garden so I will have to give this a go!xx
