Aside from salmon being my favorite fish to eat, I’d say tilapia is my second favorite. Why? Well, just like salmon, you can serve it with just about anything. There is salad, tacos, serve with a side of rice and vegetables, and the list goes on. I probably make this at least once a week. And honestly, I rarely make the same exact meal with tilapia. I am always coming up with new ideas on how to serve it. Two great things about tilapia is that it cooks in just about 7 minutes tops and it’s an affordable fish! Many believe that fish is too expensive to buy every week, but it is actually cheaper than chicken or beef. It is also easier to digest! Give it a try, you won’t be disappointed! This week I made chili honey tilapia salad & dressing.

Tell Me More About Tilapia

Tilapia is a mild, white fish. It is low on mercury and has lots of omega 3. You can always find this fish year round, pretty much at the same price. My local grocery store sells it for $7.99 lb. It’s a great deal and good for you!

As I mentioned above, tilapia cooks in about 7 minutes total. It is not a fish that needs to be marinated overnight to get the flavors you want. Which is perfect when your in a pinch to make dinner!

  • 1/2 an iceberg lettuce, shredded thick

  • 1/2 tsp of chili powder

  • 1/2 tsp of cumin powder

  • 1/2 tsp of garlic powder

  • 1/2 tsp of onion powder

  • 1/2 tsp of dried cilantro

  • olive oil

  • SALAD DRESSING INGREDIENTS
  • 1/4 cup of olive oil

  • 1/2 lime, juiced

  • 2 tbsp of honey

  • 1/2 tsp of chili powder

  • 1/2 tsp of cumin powder

  • 1/2 tsp of garlic powder

  • 1/2 tsp of onion powder

  • 1/2 tsp of dried cilantro

Directions

  • Set oven on HI BROIL. On a sheet pan, add the sweet potatoes. Season with salt and pepper and drizzle olive oil. Give the sweet potatoes a nice toss to incorporate the salt, pepper and olive oil. Broil for 10 minutes. Toss again and broil for another 5 minutes. Set aside.
  • While the sweet potatoes are in the oven, combine the dried seasonings. Mix and season tilapia on both sides. Turn burner on MED HI. Using a non-stick pan, drizzle about a tbsp or 2 onto the pan. Add tilapia and cook for about 3 to 4 minutes, per side. Set aside.
  • Next, assemble the salad. Arrange lettuce on 2 plates. Pour half the beans onto each plate, along with the sweet potatoes. Add tilapia.
  • Lastly, mix in the salad dressing ingredients. Give it a nice stir and pour salad dressing onto both salads. Serve!
