I was thinking of what to call this salad. Besides the color orange, we have the colors of the rainbow in this salad. I decided on calling it the Rainbow Roasted Vegetable Salad. Here we have red peppers and red onions. The onions look purple. Not sure where red comes in! Then there is broccolini and kale, corn and chickpeas and lastly, the blue cheese. This salad was so filling and so good! I went shopping for the ingredients for a second time. On my list for dinner this week, AGAIN!
Chicken can become boring especially when you have it most days of the week. Chicken is versatile and you can serve it in so many ways. One of my go to meals is corn salsa served over grilled chicken thighs. It is simple and super tasty. If you read my blogs you may have noticed a pattern here. EASY and SIMPLE meals with TONS of flavor. That's my motto.
What to make and do with leftovers? That’s always a question we all have. Most dismiss the idea of what to do and either save what’s left for the next day or toss it. There are so many things to make with leftovers. One thing I hate is to waste food. Whether I plan to use the food for later that day, the next day or a few days later there is always something you can incorporate with your leftovers. If you don’t plan to use it anytime soon then freeze it!
