5 Minute Vegetable Stir Fry (Meatless Monday)
There are days I don’t want meat or fish. A vegetable stir fry is perfect for a Meatless Monday Meal! Use up all the vegetables you have in your fridge, that you just have a little of. A little of this and that makes a great mix and that includes using up what you would probably throw out because it’s not even a serving! It makes the perfect dish in just 5 minutes! Here is my 5 minute vegetable stir fry recipe you should try!
What Vegetables Can I Use?
Use any vegetable you would like! I am always mixing different vegetables, into my stir fry. It all depends on the meal and also what I have on hand. I won’t use a recipe card for this, as it is that simple! Grocery stores sell small packages of “stir fry” mixes. This is basically the same thing. Just cheaper since your making at home and larger portions!
You Will Need:
- A cup of cabbage
- 1 red pepper cut into smaller chunks
- A cup of frozen or fresh corn
- 1 cup of brussel sprouts, sliced in half
- A stack of celery, ends trimmed and cut in half
- Cooking spray
- your favorite stir fry sauce, such as garlic teriyaki (see my homemade, go to sauce, HERE)
I prefer using my non-stick pan to cook my vegetables. It also makes for easy clean up since the pan is non-stick! You can check out my favorite kitchen gadget must haves HERE. The larger the pan, the better, as it’s easy to spill the vegetables when tossing!
Using a large non-stick pan, spray the pan with cooking spray. Turn the burner on MED HIGH. Once the pan is hot, add all your vegetables. Cook for about 2 minutes and toss. Add about a cup (or less) of the sauce to the vegetables. Lower the heat to MED and cover vegetables for another 2-3 minutes. And that is it!
Traditional sauces for this dish are usually teriyaki sauces but you can use whatever you are in the mood for!
