Grilled Chicken Thighs with Capers and Olives
I LOVE capers and olives! Do you? When I was pregnant with my first son I loved eating capers and olives. I would purchase the jar that has the mixer of both and snack on that. They are delicious. Chicken thighs with capers and olives is definitely one of our go to meals we enjoy. At home we eat a lot of chicken breast and thighs at home, in terms of meat. That and fish. Every few weeks I’ll switch it up and make ground chicken, wings, legs or beef. It can get a bit tiring to eat chicken all the time. Which is why I have to spice things up a bit to get different flavors going or else, I will not enjoy my meal and neither will my family.
Capers and Olives
Capers is not something you see on menus often, however it is super delicious and tangy! At just 2 calories a tablespoon, it is a healthy snack! It is actually a flower bud that is brined in salt. A pickled caper. If you like pickles you are sure to like capers., which I believe are even tastier! They go well with chicken, fish and beef.
This recipe calls for Spanish olives. Tangy and softer, compared to other olives you would use for a cheese platter. Spanish olives have a nutty, fruity flavor that make it perfect for cooked dishes. Fun to snack on when you want a salty snack.
You will notice I did not add salt to this recipe, as the capers and olives have all the salt in this dish and are not overpowering. There is so much flavor!
How to Add Capers and Olives?
Cook the chicken and add the capers and olives at the very end, when the chicken is done cooking. The juices will infuse into the chicken immediately.
You will need:
- chicken thighs
- onion powder
- garlic powder
- pepper
- oregano
- capers
- olives (including some of the juice)
- sriracha
- asparagus
- olive oil
Add some asparagus onto a plate, add some chicken, capers and olives and top off with a nice drizzle of Sriracha sauce! The sriracha sauce will give it some extra spiciness that pairs well with the tanginess already in this dish!

Ingredients
1 1/2 lbs of chicken thighs, cut up into small pieces
1 tsp Onion Powder
1/2 tsp Garlic Powder
1 tsp ground Oregano
Pepper
2 tbsp Olive Oil
2 tbsp Spanish Olives and 2 tbsp of the olive juice in jar
2 tbsp capers
Sriracha sauce
1 bunch of Asparagus
Directions
- Season your chicken thighs with the onion powder, garlic powder, pepper and ground oregano.
- Heat your skillet with the olive oil and add the chicken. Sauté for about 7 minutes each side.
- While that is cooking boil some water in another pan and steam the asparagus for about 5-7 min.
- Once the chicken is fully cooked add the Spanish Olives and olive juice, along with the capers.
- Serve with a drizzle of Sriracha sauce!
