Christmas Pico de Gallo (3 Ingredients)
What is Christmas Pico de Gallo? First, Pico de Gallo is heaven! It can be served as part of your meal or as an appetizer. Second, one of my favorite ways to eat pico de gallo is not with tortilla chips, its on a cheeseburger! Easily made using just 3 ingredients! And three, I named this appetizer, Pico de Gallo because it has Christmas colors without tasting like Christmas. Red, white and green. The perfect healthy side to have since December is all about the sweets!
My Favorite Way to Eat Pico de Gallo
Fuddruckers was my first job in high school. This was my introduction to eating pico de gallo on a burger. Absolutely delicious. They do have the best burgers, not because I worked there but everything is fresh! Every morning the buns are baked, the toppings are cut fresh and the meat is cut into your preferred size of 1/3, 1/2, 2/3 and 1 lb cooked to your liking. Now lets get back to making pico.
How It’s Made
Pico de Gallo is traditionally made with:
- Tomatoes
- Cilantro
- Red Onion
- Salt
- Pepper
- Limes
- Serrano or Jalapeno Peppers
- Oil
Again, what made this recipe Christmas worthy was the yellow onion. It become that because I did not have red onions on hand. Jalapeño peppers were also MIA in my fridge, as well. I then decided to make pico de gallo with just 3 ingredients. I used cherry tomatoes, yellow onion and cilantro. It looked just like Christmas. It looked like a giant Christmas ornament colored in red, white and green!
Season with salt, pepper, olive oil and lots of lime and it’s ready to serve. Next decide what to eat it with! I only made 1 1/2 cups as I only had a few cherry tomatoes. However, it is very inexpensive to make a large portions to serve at a large gathering. Not that is a thing for the foreseeable future. Thanks COVID.

Pico de gallo is a great appetizer served anytime of the year. Make it with yellow onions for a wintery vibe or stick to the traditional red onion for the summer. Serve it over rice and chicken or steak or make bruschetta using this topping!

Ingredients
1 cup of cherry tomatoes, cut into slices or 1 large tomato diced
1/4 cup of yellow onion, diced
1/4 cup of cilantro, roughly chopped
1 tbsp of jalapeño, diced small (optional)
1 tbs of olive oil
1/2 lime, juiced (if not super ripe and juicy, use a whole lime)*
Salt
Pepper
- Makes 1.5 cups
Directions
- Mix the tomatoes, onion, cilantro and jalapeño in a bowl.
- Add the oil, lime and salt and pepper to taste.
- Give it a good mix and serve!
