5 Spring Salads To Make This Week
Now that Spring is here, let’s start making refreshing salads! I am sharing with you 5 spring salads to make this week! This is when I start adding fruits to my salads and more raw vegetables. Many fruits I use for salads are now returning for in season. Meaning, juicy fruits for a few months! I hate buying, fruits when not in season. Lately, I have been wanting strawberries and even though they aren’t in season yet, I decided to buy some. I actually used strawberries in my eggplant salad yesterday. Some of the strawberries were sweet and some were just watery. Which is why, it’s good to purchase fruits when they are in season. Anyway, here are 5 spring salads to make this week!
Bacon Wrapped Shrimp Salad With Watermelon
This salad is on my list to make this week. For all the bacon lovers out there. Wrap your shrimp with a piece of bacon. Cook and serve with watermelon, red onions and feta cheese. Add cilantro for fresh herbs and extra flavor. This is beyond mouth watering and light! After all, watermelon is mainly water! I make this a few times over the summer. YUM!
Fresh Oregano Caprese Salad
This salad can be made anytime of the year. However, a caprese salad is such a spring/summer salad in my eyes. It’s fresh and light. Perfect for an appetizer or even a light dinner. The fresh mozzarella slices is what makes this dish super fresh, but fills you up. Traditionally, basil is used, but I used oregano leaves for this recipe and it was amazing!
Chickpea Tuna Salad
For those who don’t enjoy seafood, most do like tuna fish. Easy and a cheap dinner! Chickpea tuna salad is perfect for those busy weeknights. Sometimes a plain tuna sandwich just doesn’t feel me up. Add chickpeas for extra protein and make it a meal with extra veggies. The perfect salad! Serve as a salad or in a pita or sandwich bread.
Blackening Spice Eggplant Salad
Eggplants are overlooked. People think of eggplant parmesan or pasta ideas. There are so many ways to make and serve eggplant. I love it, as a meat alternative. Easy, meatless and perfect for vegetarians! I will be making this dish more often. I made this salad to celebrate spring!
Chili Lime Shrimp Avocado and Watermelon Salad
Another shrimp and watermelon salad. This one is a bit different from the Bacon Wrapped Shrimp with Watermelon Salad. This salad has no cheese and has more of a latin twist, served with avocados and tomatoes. The shrimp is seasoned with chili lime seasoning. It may not look like much but the avocados are full of healthy fats that keep you full.
