3 Fun Salads to Make this New Year
Happy New Year! Another year of COVID and another year to set goals. We can get into goals on another post. I want to share 3 fun salads to make this New Year! It is definitely hard to get back to healthy eating after all the sweets and extra carbs in the month of December! But these 3 salads will get you right back to healthy with a fun twist!
The month of December was pretty busy with my husband getting ACL surgery and getting ready for the holidays. Therefore, I did not blog these 3 recipes. However, if interested I can post a blog with the recipe measurements! I might do that anyway, at some point!
Salmon Burrito Bowl
Make your favorite salmon and make a burrito bowl out of it. The base of this salad is lettuce, topped off with corn, cilantro, tomatoes, red onion, peppers, cucumbers and avocado. I added a sprinkle of shredded cheese and for the dressing, I drizzled ranch dressing and sriracha sauce. The salmon and avocado have healthy fats that make this meal extra filling without adding rice!
Taco Bowl
Here is another similar bowl but made with taco seasoning. I used ground beef, tomatoes, pickled jalapeños, red onion and a mix of corn and spicy black beans. The base is also lettuce with a sprinkle of cheese. For the dressing I also used ranch but drizzled hot sauce instead of sriracha.
BBQ Chickpea Salad
This salad is super fun and you may already have these ingredients at home! Season chickpeas with salt and pepper. Drizzle some olive oil and roast for about 10-12 minutes. Toss in your favorite BBQ sauce and add to any salad. For this chickpea salad I used lettuce and leftover roasted asparagus as the base. I also added some fresh cilantro and red peppers. For the dressing I drizzled some more BBQ sauce and added some ranch dressing. I also sprinkled a bit of parmesan cheese. An easy weeknight salad that is healthy and super filling!

Hi Joni! Thank you so much! My husband is doing better but it’s a long recovery. Almost a month later and he still has pain is limping. I hope you had a great holiday and Happy new year! ? ??
I did thank you. I am so sorry about your husband. I would imagine that injury would require a great deal of rehab and pain. There are so many wonderful people in the blogging community that need prayer I try to say a prayer every morning to help everyone who is sick or suffering for healing. I hope he gets some relief soon. It is hard to watch the person you love in pain also. Stay healthy and take care of you and may God help your husband’s recovery. ????
