If you haven’t noticed from my previous posts, I love roasted vegetables. And this salad is no exception. It’s bright in colors and has the crunch from the green beans and creamy texture of the sweet potatoes! With just 3 ingredients, this salad is perfect to serve as a side this Easter! Roasted green beans and sweet potato salad (3 ingredients)!

Quick and easy is the way to go. Especially if your hosting. You have plenty of dishes to make. Why not make at least one dish that is easy to make right in your oven! This salad serves 4 as a side dish but can serve 2 if serving as a main salad with meat or fish!

How to Make

Roasted green beans and sweet potatoes is great to make in one pan. For lunch today, I did not feel like eating a green leaf salad and so I decided to roast some green beans and sweet potatoes.  Season the sweet potatoes with salt and pepper and drizzle with some olive oil. Broil the sweet potatoes for about 10 minutes.  Give it a toss AND THEN add the green beans to the pan. Season them with salt and pepper and a drizzle of olive oil. Broil for another 10-12 minutes.  Once the roasted vegetables are out of the pan, add feta cheese, another drizzle of olive oil and lime juice.  Add just a sprinkle of salt and pepper and serve!

A one pan dish salad to make for Easter or any time of the year!

Ingredients

  • 2 large sweet potatoes or 4 small ones, peeled and diced

  • 1 lb of green beans

  • ¼ cup of feta cheese

  • 1 lime squeezed

  • salt

  • pepper

  • olive oil

Directions

  • Turn your oven on HIGH BROIL. Season the sweet potatoes with salt and pepper and drizzle with some olive oil. Broil the sweet potatoes for about 10 minutes on a sheet pan. 
  • Give it a toss AND THEN add the green beans to the pan.  Season the green beans with salt, pepper and a drizzle of olive oil. Broil for another 10-12 minutes. 
  • Once the roasted vegetables are out of the pan, add feta cheese, another drizzle of olive oil and lime juice.  Add just a sprinkle of salt and pepper.
  • Toss the salad and serve!
