Make a Coconut Pineapple Smoothie with Just 3 Ingredients!
Coconuts and pineapples are tropical fruits. We all know they pair well together. Bringing together the sweet and nuttiness of the coconut and the sweetness of the pineapple is perfect. I love making homemade juices and drinking lots of water in the summer. However, a creamy and cold smoothie always hits the spot in the hot summer months! Here is my 3 Ingredient Coconut Pineapple Smoothie Recipe.
Ingredients
All you need for this recipe is:
- fresh pineapple chunks
- unsweetened coconut milk or frozen cubes
- lime, juiced
- ice, optional
Coconut Milk
I always buy unsweetened coconut milk. Easy to sweeten, if necessary. Yet it tastes delicious without the extra sugars. I had extra coconut milk left and decided to freeze what I had leftover. Because I had coconut cubes I did not need to add ice to my smoothie. I added 3 coconut cubes and a splash of coconut milk to get a thinner consistency. You can always omit the splash of coconut milk if you like a thicker smoothie. Same goes for all smoothie recipes.
Pineapple
I love pineapple! It’s amazing by itself, in smoothies and cooking! Grilled pineapple is amazing in the summer, as well!
How to pick a ripe pineapple:
If you plan on making a recipe with pineapple or just want a fresh pineapple, plan ahead. Really! Not once have I ever gone to a grocery store and seen a ripe pineapple. The tags on the pineapples always say ripe but they really aren’t. It’s all about the aesthetics here. No one wants. to buy an ugly looking pineapple. that may look rotten to some. An unripe pineapple is beautiful which tells you. itis not ready to eat! A ripe pineapple is a dark yellowish brown, extra heavy and the green leaves have also turned brown and hard. Now this tells you you have a juicy pineapple!
A week sitting on my kitchen counter and I have a ripe and juicy pineapple. There are ways to help ripen a pineapple a lot sooner but to get the sweetest pineapple I like to wait for nature to take its course!

Coconut Pineapple Recipes
Instead of a smoothie you could substitute the coconut milk for coconut water. Have a refreshing cup of juice by straining the pineapple pulp. Having a get together? You could make a large batch and add your favorite alcohol as well! This also makes for great fruit bars! Kids and adults will love this cold treat.

Ingredients
1 cup of fresh pineapple, chunks
3 coconut cubes (frozen coconut milk) + a splash of coconut milk* or 1 cup of unsweetened coconut milk
1/2 lime, juiced
Ice (optional)
Directions
- If you choose to use coconut cubes, freeze some coconut milk in an ice tray for a few hours or over night.
- In a blender, add the pineapple chunks, coconut cubes or coconut milk and lime. If using the coconut milk, add some ice.
- Blend until smooth and enjoy!
Notes
- *Add a splash of coconut milk with the coconut cubes for a thinner consistency. Omit of you like your smoothies thick
