Pomegranate Winter Salad (Perfect for the Holidays)
Pomegranates are a winter fruit. Why not indulge and eat tons when they are sweet? The health benefits are amazing! Talk about all the vitamin C and antioxidants they have. Of course there are tons of other health benefits. I have been thinking of what to make for Christmas Eve and Christmas Day. After all, it needs to be special since we aren’t seeing family this year. Regardless, we are foodies, so there is always a special meal of some sort for the holidays! What about a Pomegranate Winter Salad? Perfect for the holidays right? You get all the winter colors that are so vibrant and beautiful! Setting the table gives it an extra pop of color, serving this dish!
This salad has all the textures you would want. Both crunchy and soft. Never mind the sweet and saltiness from the pomegranate and feta cheese. The pomegranate is also juicy. WOW! A burst of flavors in your mouth!
How to Cut a Pomegranate
There are many ways to cut pomegranate. However, my favorite way has to be getting the seeds out, while submerged in water. Rinse the skin, cut both pomegranate ends and cut in half. In a bowl, filled halfway with water, start taking the seeds out, by pushing the skin in (knocking the seeds out). By doing it this method, there is less splatter on your walls and clothes! I can’t tell you how many shirts I have stained (cold water and Dawn dish soap help). Yet, when I am rushing around, the last thing I want to do is clean my shirt. Let alone, all the stains on the walls. It looks like a bloody mess lol
Holiday Dish
I have probably mentioned, I do not cook the same meals for Christmas each year. Every year it’s something different. Although, some type of seafood is always on the menu. This year I plan on making this Pomegranate Winter Salad. I made it for dinner tonight and it was AMAZING. We had it with grilled chicken thighs. On Christmas Day, I plan to serve it with snapper. If I can find snapper that is! Snapper is delicious but I have never been able to purchase it at my local grocery stores. I am on the hunt for a seafood market that sells it. I’ve had it many times at restaurants and love it. For Christmas Eve I plan on making Buttery Garlic Shrimp Pasta (Perfect for the Holidays).
Meal in Under 30 Minutes
In under 30 minutes you have a gorgeous and delicious salad. Besides cooking the squash, the rest of the ingredients just need to be added to the salad. The pomegranate takes a few minutes to get the seeds out.
A few tips…I broiled a whole squash, as I love to have leftover vegetables to recreate dishes the next day. Whether it be for breakfast, lunch or dinner. Purchase pre-washed baby lettuce. One less step, since my salad spinner broke! I need to buy a new one. Lastly, cut the whole pomegranate and save the other half for a parfait or to eat as is! One more tip. The salad dressing can be made ahead!

Salads are boring if it consists of lettuce, lettuce and lettuce. Add crunch, colorful fruits and vegetables, cooked and raw. The textures and flavors are a punch everytime!

Pomegranate Winter Salad (Perfect for the Holidays)

Salad Ingredients
1/2 butternut squash, cubed
1/2 a pomegranate, seeds
1/4-1/3 cup of feta cheese
2 tbsp of pumpkin seeds
4 oz baby lettuce, washed and dried (I bought pre-washed baby lettuce)
1-2 tbs of olive oil
Salt
Pepper
- Serves 3
- SALAD DRESSING INGREDIENTS
1/4 cup of olive oil
1/2 tsp dried oregano
1/2 lemon, juiced
Salt
Pepper
Directions
- Turn oven on HI BROIL. On a sheet pan, add butternut squash. Season with salt and pepper and drizzle with olive oil. Give the squash a nice toss to incorporate the seasoning and oil. BROIL for 15 minutes, toss and BROIL for another 7 minutes. Set aside.
- Next make the salad dressing. In a small bowl mix in the olive oil, lemon juice and dried oregano. Season with salt and pepper. Set aside.
- Lastly, start preparing the salad. On a large platter, layer the baby lettuce, butternut squash, pumpkin seeds, pomegranate seeds and feta cheese.
- Drizzle the dressing over the salad and serve!
Notes
- Serve as is or with grilled chicken
- Serve as a main meal or an an appetizer
- This salad serves 3 or 2 adults and 2 children

This salad sounds delicious, especially the pomegranate. My family doesn’t usually serve salad around the holidays, although we have sometines served Waldorf salad at Thanksgiving before. This salad could be worth trying for my family’s next holiday meal.
