I really only bake during October, November and December months. Yes, just the holidays. I might randomly bake something during the year but not really. Unless it’s my Healthy Chocolate Peanut Butter Cookies/5 Ingredients, which I make often. But I don’t consider that much baking, considering all it takes is 15 minutes! This meal is perfect to make with leftover thanksgiving turkey. I will definitely be making this again with turkey! Loaded sweet potatoes with everything fall. What else could you ask for? I only had a bit of chicken leftover and so I made my husband the one with chicken and I had the meatless one. They boys had resorted to russet potatoes. Honestly, I choose sweet potatoes over regular potatoes. Anything sweet is a YES.
