How to Make Macaroni and Cheese for 2

It was Saturday afternoon and I definitely did not want to cook again since I made chicken kabob subs for lunch. I honestly have been making these once a week for a while now. The kids and my husband ask for it! I don’t mind as it is simple and delicious!

My oldest son and I love mac and cheese. My second oldest does not like it. Can you believe it! A child who does not like mac and cheese?! I ended making a cheese platter for my husband and son and the baby tried sweet potatoes today and loved it. Win win today 🙂

I decided to make mac and cheese for my oldest son and I. My go to mac and cheese has sharp cheddar and pepper jack cheese, made with cavatappi pasta. It is my favorite pasta to use for mac and cheese because of the long curl. The cheese glues on very well to cavatappi. However, I did not have any at home. I had cheese, heavy cream and tri-color rotini pasta. Here is what I came up with. It was super delicious.

I only had mild cheddar cheese. I prefer to use sharp cheddar for more flavor and so I added a few extra ingredients for an extra kick!

Quick mac and cheese!

Ingredients

  • 4 cups of rotini pasta or your preferred pasta

  • 1 cup of shredded cheddar cheese

  • 1 tbs of unsalted butter

  • 1/4 cup of heavy cream

  • a dash of cayenne pepper

  • 1/8 tsp of pepper

  • 8 cherry tomatoes sliced in half (optional)

  • handful of spinach, chopped (optional)

  • fresh parmesan cheese

  • 1 green onion, sliced thinly

Directions

  • Start by cooking your pasta, per directions on the box
  • While the pasta is boiling, shred your cheese, slice your tomatoes and green onion and chop your spinach, if using.
  • Once the pasta is cooked, drain the water and pour the pasta into a bowl. Using the the same pan, lower the heat to med low and add the butter. It will melt quickly. If it looks like it is turning brown immediately turn the heat lower. Then add the heavy cream and slowly start adding the cheddar cheese, stirring the whole time.
  • Once the cheese has melted add the pepper and cayenne pepper. Turn the heat off and fold in the pasta until completely coated.
  • Now to add some more flavor, I mixed in the cherry tomatoes and spinach. To top it off, I shredded some fresh parmesan cheese and added some sliced green onions.

Now to add some more flavor, I mixed in the cherry tomatoes and spinach. To top it off, I shredded some fresh parmesan cheese and added some sliced green onions. It tasted amazing! I will say I will be making this again. Great to serve as a side dish for a crowd and it’s also a cheap dinner!
