Blog #109: Nectarines are one of my favorite fruits. Sweet and juicy with a soft bite. I could sit there and eat them as I would a bowl of popcorn LOL. Here is another 3 ingredient salad that is hassle free when you would rather be doing something else but still need to eat! Nectarine and blue cheese arugula salad. What’s not to love?
You get the sweetness from the nectarine, nutty and peppery flavor from arugula and the saltiness sharp flavor from the blue cheese. With all these flavors you don’t need any extra toppings for this salad. Tons of flavor with just three ingredients. The salad dressing is even easier. Oil and vinegar with a dash of salt. Because the cheese is already salty there is no need for to much salt. The pinch, is to salt the arugula a bit in case you get a bite without the cheese. You still want flavor in every bite!
Blue Cheese VS Feta Cheese
I am definitely a cheese lover but I admit it took me years to enjoy blue cheese. Although it’s a cheese I have to be in the mood for or have with certain dishes, as it comes off too strong and overpowering at times.
If you do not like blue cheese, a great substitute is feta cheese. This cheese is also salty but has a mild taste and also crumbles better than blue cheese, in my opinion. Or you can always add just a bit of blue cheese to not overwhelm your palate.

- Feta has a mild flavor compared to blue cheese
- Feta cheese is brined to get its salty flavor
If you are out of nectarines, you may use peaches. They are part of the same family and taste the same. The only difference is the skin. Nectarines have a smooth skin, while peaches have the fuzzy skin.
I made this meal with steak but you can serve it with any meat or fish. You can serve it as an appetizer or as a side salad for dinner. Anything goes!

Serve as a main, side or appetizer salad! Best of all it’s only 3 ingredients!
5 oz of arugula, washed
4 ripe nectarines, sliced
1/4 – 1/3 cup of blue cheese
1/3 cup of olive oil
2-3 tbsp vinegar
- In a large bowl add the arugula, nectarine slices, olive oil and vinegar. Give it a nice toss and season with salt, to your liking.
- Sprinkle with crumbled blue cheese and serve!
- Substitute for feta cheese, if you prefer
- Peaches are also a good substitute for nectarines
