Salt and Pepper Shrimp (Served 2 ways)
Salt and pepper shrimp is pretty tasty. Especially when it’s fried. Truth is I don’t fry food because of all the extra oil it takes to cook food and the smell of the oil. And of course it’s not healthy. I prefer to bake or broil food instead of frying. For this recipe, I decided not to bread the shrimp. What would salt and pepper shrimp taste without the bread crumbs and frying. After all it’s one of those appetizers that you can’t really say no to. Well I decided to take a chance and make shrimp (served 2 ways) in a healthier way. Minus all the sodium in the salt! You really can’t make salt and pepper shrimp without the salt!
Rice and Beans
I love rice and beans. It is a very comforting meal for me, as I grew up eating this everyday with a side of meat and salad. Although I don’t make this meal everyday, rice and beans go very well with shrimp. It’s an easy side to make and adults and kids love it! You could also omit the beans and serve with sauteed vegetables.
Shrimp Salad
For a healthier option, altogether, have this salt and pepper shrimp as a salad! I served my shrimp with spinach salad, topped with carrots, mixed lettuce and broccoli. The salad option is even faster than the rice and beans. You could make this in 10 minutes since shrimp cooks so quickly and the salad was easy to put together. Serve with your favorite vinaigrette dressing.

I love trying out new dry rub seasons with shrimp. Aside from serving shrimp with rice and beans or in a salad, try it in a taco.

1 lb of shrimp, deveined
salt
pepper
garlic powder
3 cloves of garlic, minced
1-2 tbsp of olive oil
1 lemon, cut into 4 wedges for serving
dried cilantro, for garnish
Directions
- Start by removing the tails of the shrimp. wash and dry shrimp with a kitchen towel or paper towels.
- Generously season shrimp with garlic powder, salt and pepper. Mix in the minced garlic.
- Turn burner on stove to MED HIGH. Once your pan is hot, add the oil. Start adding the shrimp, but do not overcrowd the pan. Cook for about 3-4 minutes per side.
- Serve with lemon wedges (see what to serve with, suggestions below)

- Great to serve as an appetizer; with rice and beans or with salad
