Grilled Chicken Wrap with Strawberry and Goat Cheese

Wraps are great to have anytime of the year but they are even better in the summer. They aren’t as heavy and thick, as a sub roll. This grilled chicken wrap with strawberry and goat cheese is perfect for the summer. Light and refreshing!

Grilled Chicken

For this recipe I like to use a Greek marinade or make my own seasoning. It usually consists of salt, pepper, dried oregano, garlic and onion powder and lemon juice. Using leftover chicken breast works too. It makes things easier!

How to Make

The Wrap

Any flour tortilla will work for this recipe but to bring out more flavor I used the garden herb spinach tortillas. Make sure to use a large tortilla for easy wrapping. You don’t want your ingredients to fall out!

The Filling

The filling is the best part! To make this wrap sweet and tangy, I used balsamic glaze, strawberries and goat cheese. I chose balsamic glaze instead of balsamic vinaigrette so the wrap wouldn’t get soggy or runny. The glaze is perfect for this finger food.

Start with a spinach wrap; add a handful of spinach, grilled chicken, strawberries, goat cheese and green onion slices. Top with a balsamic glaze, wrap your tortilla, slice in half and serve!

Cheese

Not everyone likes goat cheese. It is an acquired taste for sure. If you don’t like goat cheese a good substitute is feta cheese for this recipe. Lighter in taste but still not a mild tasting cheese.

How to Serve

This grilled chicken wrap can be served for lunch or dinner. What’s even better is, you can cut small slices and serve them as an appetizer on a hot summer day! Make your grilled chicken the night before and all you have to do is put the wrap together!

Ingredients

  • 1 1/2 lbs of chicken breast or leftover grilled chicken

  • 2 green onions, thinly sliced

  • 1 1/2 cups of sliced strawberries

  • 1/4 cup of goat cheese, sliced into small pieces

  • 4 handfuls of spinach leaves

  • balsamic glaze

  • 4 spinach wrap tortillas

  • Grilled Chicken
  • 1/2 cup of Greek dressing

Directions

  • If you are not using leftover chicken, start by marinating chicken with Greek dressing. Cook chicken on a skillet or grill for 5-6 minutes per side or until juices run out. Remove from skillet or grill and cut into strips or cubes.
  • Take a tortilla wrap and add a handful if spinach, chicken, goat cheese and green onion slices.
  • Drizzle with balsamic glaze. Fold the wrap inwards and fold again for a tight hold.
  • Cut in half and serve!

Notes

  • It’s best to marinate chicken overnight or for at least a few hours for ultimate flavor;
  • Feta cheese can be substituted for goat cheese with this recipe.
