Don’t we all love thanksgiving leftovers? For one, no cooking and two its a comforting meal. But I must admit, after having the same meal for breakfast, lunch and dinner the next day I do get a bit tired of it on day 2 of leftovers. You can either freeze those leftovers or put them to use!

Read MoreI’ve been using pumpkin spice A LOT lately. Perfect excuse, because it’s fall. I had some leftover chicken and decided to make loaded pumpkin spice sweet potatoes. This meal is perfect to make with leftover thanksgiving turkey. I will definitely be making this again with turkey! Loaded sweet potatoes with everything fall. What else could you ask for? I only had a bit of chicken leftover and so I made my husband the one with chicken and I had the meatless one. They boys had resorted to russet potatoes. Honestly, I choose sweet potatoes over regular potatoes. Anything sweet is a YES.

Normally this time of year we are wondering what to make for dinner, who will host or if your are visiting family. Then of course you have to figure out if you are bringing a dish. Of course, this year will be a lot different than other years, due to social distancing. However, there is still a meal to prepare at home!
