Buttery Garlic Shrimp Pasta (Perfect for the Holidays)

For dinner I made a buttery garlic shrimp pasta. I have to admit I have been wanting pasta lately and my little one really enjoys it. It’s also an excuse to make it more often. First of all it’s easy, quick and very filling. Pasta is definitely a dish for those busy school nights. On top of that, the shrimp cooks in just about the same time your pasta cooks! I made this dish with the thought I could make it for Christmas Eve or Christmas. Pasta and seafood are dishes I lean towards for the holidays. Maybe because they are comforting dishes. Garlic Shrimp Pasta is easy but can be made as fancy as you want it!

Olives Marinated in Garlic

One of favorite marinated olives is made with garlic, parmesan and lemon juice. If you’ve never tried marinated olives, you must! Olives are so delicious. I can easily eat them by the jar. In fact, I have on many occasions. During my first pregnancy that was one of cravings. I love olives!! Do you like marinated olives? Most of us don’t think to make marinated olives because we can easily purchase them in store and secondly, we don’t think to marinate them unless there is an occasion for celebration. Sautéed Buttery, Garlic Cod with Lime

Butter, garlic and lime! What an amazing combination. Cod is a fish that is pretty bland on its own. Which is great when you want to experiment with flavors. I don’t usually buy cod often but wanted something different. For lunch this weekend, I made a sautéed buttery, garlic cod with lime. If I had thought of the recipe in advance I would have let the fish marinate for a few hours before cooking. However, it still turned out delicious.

To celebrate my 12 year anniversary, with my husband, I made some steak covered with chimichurri sauce and some scallops. I can’t believe its been that long already with 3 kids!
