Bruschetta On A Rice Cake (A Healthy Holiday Snack)

The holidays are filled with sweets. There is always an excuse to eat something unhealthy because it’s the holiday season. As I write this I feel so full of eating unhealthy today. Now I have a slight headache! Tomorrow I will go back to healthy eating. With that being said, I want to share a healthy holiday snack I have been making, Bruschetta on a rice cake. It’s really not ONLY a holiday snack but I am calling it that because it has all the Christmas colors. So why not call it a holiday snack? I love bruschetta. It’s very fresh, light and serving it on a rice cake is even lighter than on bread. At less than 50 calories per rice cake, it can be topped with anything from peanut butter and bananas to guacamole without worrying about the extra calories.

Low Calorie Energy Balls

I love making my Protein Granola Balls Dipped in Chocolate but they are protein balls. Meaning they are higher in calories for the purpose of having more protein on the go! I decided to recreate them and make low calorie energy balls with less calories. These low calorie energy balls are 80 calories a ball and I was able to make 16 of them! Super satisfying and perfect to snack on when your doing nothing, in terms of moving around at home!

Olives Marinated in Garlic

One of favorite marinated olives is made with garlic, parmesan and lemon juice. If you’ve never tried marinated olives, you must! Olives are so delicious. I can easily eat them by the jar. In fact, I have on many occasions. During my first pregnancy that was one of cravings. I love olives!! Do you like marinated olives? Most of us don’t think to make marinated olives because we can easily purchase them in store and secondly, we don’t think to marinate them unless there is an occasion for celebration. I do admit, I fall into these two categories.
