Chili Lime Shrimp Tacos
Blog #114: Lately it has been busier than usual and therefore I haven’t had much time for anything really. In the midst of things I decided to make a quick lunch so I could finish all my errands. I made chili lime shrimp tacos. No other seasoning required. Toss the chili lime seasoning liberally onto some shrimp and cook!
Substitutions
Some days I don’t feel like cooking and 15 meals is all I want to make. You can always substitute the shrimp for chicken or steak. However, the cooking time will be slightly longer. A tip that helps when I want to speed up the process is to cut up the chicken or steak OR vegetables smaller. This definitely puts dinner on the table a lot quicker.
Cooking Time
Shrimp cooks in about 6 minutes tops. 3 minutes per side and you’ve got yourself some cooked shrimp. In total this dish took 16 minutes! While your shrimp cooks, heat the flour tortillas in a pan. Then spread some mashed avocado onto a tortilla, add shrimp, cheese and lettuce. Top with a splash of vinegar on the lettuce for extra taste. Without it the lettuce will taste like dry piece of leaf. No need for any oil as the avocado covers the creamy texture and the vinegar will add a punch of flavor.

- Butter

Note, I would not feed the shrimp to children under 3 unless cut up in bite size. I fed my now one year old (turned one yesterday! Woohoo! Time flies!) the taco with just the cheese and avocado. He does not have teeth yet and the shrimp texture may be a choking hazard at this point!
Serves 3-4 tacos per person for a total of 12 tacos. Besides a nice portion size for a small child, these tacos are great as appetizers and even snacking when you have guests over. The avocado holds the shrimp and toppings in place. Therefore, they aren’t as messy as the typical taco as there aren’t so many ingredients.

1 lb of shrimp, tails removed
12 small flour tortillas
1 cup of lettuce, chopped
1/2 cup of cheddar cheese, shredded
1 avocado, mashed
1/2 lime, juiced
1-2 tbsp of olive oil
1 tbsp of unsalted butter
4 tbsp of vinegar
Directions
- Pat Shrimp dry and generously season shrimp with chili lime seasoning.
- In a non stick pan, on MED HI add 1-2 tbsps of olive oil. Cook shrimp 3 minutes per side. As the shrimp cooks, butter both sides of each tortilla and toast for a few seconds. Once shrimp is cooked and tortillas are toasted, set aside.
- Take your avocado and mash it. Mix in the lime juice.
- Take a scoop of avocado and spread on each tortilla. Top with 3 shrimps, shredded cheese, lettuce and a splash of vinegar and serve!
- Serves 3-4 (makes 12 tacos)
