Blog #8 Chipotle Shrimp Tacos

Tired of eating chicken and meat in general?  Try something new like seafood.  I love shrimp and I honestly don’t get too tired from eating it.  It’s quick to cook and marinates easily.  I wanted to make tacos but did not want chicken tacos, my usual type of taco.  Although once a while I’ll make tilapia tacos.  Mainly in the summer, I guess.  Anyway I wanted something cook.  To be honest my husband wanted chicken tacos so I did ended up making chicken and shrimp tacos!  The best part is I had plenty of chicken left over to pack for my boys school lunch! 

I LOVE CHEESE!  I can’t express that enough.  You would think I would have added cheese to this taco but I didn’t! I was debating but ultimately decided against it since this taco recipe was perfect just the way it was.

Chipotle Shrimp Tacos

Shrimp tacos with sweet corn and some spice

Ingredients

  • 1lb of uncooked Shrimp

  • Flour Tortillas

  • 2 tsp Garlic Powder

  • 2 tsp of Cumin Powder

  • 2-3 tbsp Chipotle hot sauce

  • 3 ears of corn (kernels removed)

  • 1/4 sliced onion

  • 1 small jalapeño, diced

  • 1/4 cup of sliced cherry tomatoes

  • 1 cup of tightly packed mixed greens

  • Coconut Spray

Directions

  • Peel your shrimp and season with 1tsp each of garlic powder, pepper, onion powder, cumin powder and Chipotle hot sauce.  Heat your skillet with 1 tbsp of olive oil and add the shrimp.  Cook for about 2-3 minutes per side on high heat.  Remove the shrimp and cover in a bowl to keep warm. 
  • Lower the heat to medium high and add 1 tbs of olive oil to your skillet.  Mix 1tsp each of garlic powder, pepper, onion powder, cumin powder and Chipotle hot sauce to the corn kernels, diced jalapeño and sliced onions.  Add to the skillet and sauté for about 5 minutes. You will know when the corn is ready as it will turn bright yellow.  I did not cut the onions super thin since I wanted to have some crunchy texture in my taco. Once cooked put aside. 
  • Take a frying pan and heat it up.  It is time to warm up some tortillas.  I like to use coconut spray since it’s less greasy for this part.  Spray the frying pan and add a tortilla for about 30 seconds each side.  Make sure the pan is really hot.
  • Time to assemble your taco!  Take a tortilla add some corn, jalapeño and corn mixture.  Then add some shrimp, mixes greens and cherry tomatoes.  Top off with more chipotle hot sauce!
