Beef Lettuce Taco Cups

Jump to Recipe

Blog #61: I love all kinds of tacos. I am open to try and create new tacos whenever I get the chance. This time around I wanted to try an Asian inspired dish. In my home, we love Asian marinades and salads. This dish works perfect with lettuce as the base, instead of a flour tortilla. The meat has a nice sweet sauce that would feel too heavy in a tortilla or taco shell. I wanted the taste of the beef and carrots to stand out! I also don’t enjoy rice in tacos. It is traditional but I don’t enjoy the texture.

These tacos are delicious. I have made lettuce tacos before but this is my first Asian inspired lettuce tacos. It made a wonderful light, yet filling dish. It was a little messy since the lettuce is obviously thin and tears easily compared to a tortilla or taco shell. You can easily just take a fork and knife if that makes it easier for you.

There are endless possibilities on making tacos with whatever ingredients you’d like. Traditional or non-traditional. Whatever floats your boat. Let me know what you think!

I have shrimp and think I will make one my favorite Shrimp Tacos for #TacoTuesday and this taco will also be on my list again this week!
