Easy Cod Soup With Tomato Broth
Soup is so yummy and always easy to make. The longer it sits the better it tastes. My all time favorite soup is my Herb Lemon Chicken Soup. We always think of making soup in the winter, when we are sick or to keep warm. However, soups can also be made in the summer and still feel summery. I haven’t made this Easy Cod Soup with Tomato Broth in a while. Come to think about it, I only make it in the summer.
Easy Cod Soup
This cod soup with tomato broth could not be any easier. You don’t need many ingredients to make this delicious soup. And you may already have all the ingredients you need, minus the fish. On top of being an easy soup to make, it also looks fancy. Serve with a side of French bread and you got yourself a nice meal. Best of all this only takes 20 minutes to make!
All You Need:
- cod
- tomatoes
- vinegar
- shallots
- thyme
- salt
- pepper
- olive oil
Good Substitutes For Fish
You want to use any mild fish for this soup. The vinegar and shallots bring out the flavors, along with the thyme and tomato broth. Some good substitutes for cod are stripped bass, haddock, mahi mahi and grouper.

Serve soup as an appetizer in smaller bowls or serve as the main meal. Either way this goes well with French bread. As I mentioned above, I tend to make this soup during the summer months. There are just some recipes I make during certain seasons. However, cod soup is perfect for any season! It is easy to make and not many ingredients! It is also easy to double the recipe for a larger crowd!

Ingredients
1 lb of cod, cut into 2 large pieces
2 beef tomatoes, cut into large chunks
2 shallots, sliced
1/3 cup of vinegar
1/3 cup of water
3 tbsp of olive oil
6 fresh thyme sprigs + more for serving
Salt
Pepper
Directions
- Lower the heat to MED HIGH and add the cod. Season with salt and pepper and cook the fish for about 5-7 minutes or until fish is flaky when pierced with a fork.
- In a pot, set to HIGH, add the vinegar, water and oil. Add the tomatoes, shallots and thyme. Bring to a BOIL. About 3-5 minutes.
- Remove thyme from soup. Serve soup into 4 bowls and top with fresh thyme leaves.
- Serve cod soup with French bread and enjoy!
