I love making my Protein Granola Balls Dipped in Chocolate but they are protein balls. Meaning they are higher in calories for the purpose of having more protein on the go! I decided to recreate them and make low calorie energy balls with less calories. These low calorie energy balls are 80 calories a ball and I was able to make 16 of them! Super satisfying and perfect to snack on when your doing nothing, in terms of moving around at home!

Here is another yummy winter salad that is colorful and super filling. It is also meatless! Perfect for Meatless Mondays! It is a 4 Ingredient Kale Winter Salad with Roasted Sweet Potatoes, Roasted Chickpeas and Wild Rice. A fresh COLD salad ONLY screams spring or summer to me. During the winter I crave warm and cozy foods. The same goes for salads in the winter. To make this salad hearty, I sautéed the kale. I then roasted the chick peas and sweet potatoes. The fourth ingredient is wild rice, which I had as a leftover. All I had to do was heat it up. I served it with a vinaigrette dressing made up of olive oil, lemon and salt. And guess what? It only took me 20 minutes to make this DELICIOUS WINTER SALAD.

It’s full of fall colors and tastes amazing. Brussels sprouts and carrots with bacon is perfect, since there are so many dishes to already make. You don’t have to worry about using multiple pans. I love roasted vegetables but this is one of the few vegetable dishes I like to sauté.
