The holidays are filled with sweets. There is always an excuse to eat something unhealthy because it's the holiday season. As I write this I feel so full of eating unhealthy today. Now I have a slight headache! Tomorrow I will go back to healthy eating. With that being said, I want to share a healthy holiday snack I have been making, Bruschetta on a rice cake. It's really not ONLY a holiday snack but I am calling it that because it has all the Christmas colors. So why not call it a holiday snack? I love bruschetta. It's very fresh, light and serving it on a rice cake is even lighter than on bread. At less than 50 calories per rice cake, it can be topped with anything from peanut butter and bananas to guacamole without worrying about the extra calories.
To celebrate my 12 year anniversary, with my husband, I made some steak covered with chimichurri sauce and some scallops. I can’t believe its been that long already with 3 kids! We usually go out for dinner to celebrate at our favorite restaurant, which is also where he proposed! Times have changed as you all know with this pandemic and we now have a 13 month old who is attached to my hip. I decided to make a nice lunch for us to celebrate. The secret to my steak is this 4 ingredient Chimichurri sauce.
I made a cilantro sauce marinated in chicken and mixed the sauce into a corn orzo salad. Cilantro by far is my favorite herb. I use it on just about every dish. If a dish calls for basil or parsley I end up using cilantro. Why? Because I always have it stocked. I can't live without it. Three things I always have in my kitchen is cilantro, lemons or limes and fresh parmesan cheese. Must haves, to make any dish!
