Now that Spring is here, let's start making refreshing salads! I am sharing with you 5 spring salads to make this week! This is when I start adding fruits to my salads and more raw vegetables. Many fruits I use for salads are now returning for in season. Meaning, juicy fruits for a few months! I hate buying, fruits when not in season. Lately, I have been wanting strawberries and even though they aren't in season yet, I decided to buy some. I actually used strawberries in my eggplant salad yesterday. Some of the strawberries were sweet and some were just watery. Which is why, it's good to purchase fruits when they are in season. Anyway, here are 5 spring salads to make this week!

Setting goals is a must in my book. I love writing them out in a notebook and crossing them off as I complete them. On top of setting goals, I have added challenges. My husband and I started the month of February with a challenge to omit red meat for the month. His birthday is on the 28th of this month. We will then celebrate his birthday with a nice steak! For me it was not difficult to omit red meat. I almost did forget one day will out but quickly remembered no cheeseburgers allowed! It was definitely harder for him. But when you challenge yourself once a month with someone else, it makes it easier. You have each other to motivate and you work even harder!

Salt and pepper shrimp is pretty tasty. Especially when it's fried. Truth is I don't fry food because of all the extra oil it takes to cook food and the smell of the oil. I prefer to bake or broil food instead of frying. For this recipe, I decided not to bread the shrimp. What would salt and pepper shrimp taste without the fried breading. After all it's one of those appetizers that you can't really say no to. Well I decided to take a chance and make salt and pepper shrimp (served 2 ways) in healthier way. Minus all the sodium in the salt! You really can't make salt and pepper shrimp without the salt!

Aside from salmon being my favorite fish to eat, I'd say tilapia is my second favorite. Why? Well, just like salmon, you can serve it with just about anything. There is salad, tacos, serve with a side of rice and vegetables, and the list goes on. I probably make this at least once a week. And honestly, I rarely make the same exact meal with tilapia. I am always coming up with new ideas on how to serve it. Two great things about tilapia is that it cooks in just about 7 minutes tops and it's an affordable fish! Many believe that fish is too expensive to buy every week, but it is actually cheaper than chicken or beef. It is also easier to digest! Give it a try, you won't be disappointed!
