Memorial Day is around the corner and the weather has been great. This time around, it is going to be a big celebration here in Massachusetts, as our governor is removing all COVID restrictions, starting on May 29th. Just in time for Memorial Day. Because the weather is so nice, I have started using my grill. I made a Citrus Grilled Snapper, that I have to share with you. And I thought, this would be a great meal to make on the grill. Healthy and so satisfying!
Since getting back from vacation and moving a week after, I haven't been interested in cooking much. I love making my Protein Granola Balls Dipped in Chocolate but they are protein balls. Meaning they are higher in calories for the purpose of having more protein on the go! I decided to recreate them and make low calorie energy balls with less calories. These low calorie energy balls are 80 calories a ball and I was able to make 16 of them! Super satisfying and perfect to snack on when your doing nothing, in terms of moving around at home!

Many fruits I use for salads are now returning for in season. Meaning, juicy fruits for a few months! I hate buying, fruits when not in season. Lately, I have been wanting strawberries and even though they aren't in season yet, I decided to buy some. I actually used strawberries in my eggplant salad yesterday.
