6 Easy Salads To Try At Home ( Not Boring!)
Sure, salads are easy to make. But making the same salads over and over can get pretty boring. You want to elevate your palate to actually enjoy what your eating. Some salads I repeat but many times, I come up with new salads, more often. Whether I come up with a new idea or just using leftover vegetables to make a salad. Here are 6 easy salads to try at home, that are not boring!
Shrimp and Asparagus
This is sort of a salad, right? It looks simple to make because it is! Here I made lemon pepper shrimp and asparagus. I served it with a very small side of rice, which is why I count this as a salad. I squeezed fresh lime to serve. To opt out of the rice, serve more asparagus with this dish.
Chicken, Farro & Vegetable Bowl
Use up your leftover vegetables to make this dish. Here I served farro with leftover chicken and asparagus. I added some roasted squash, sliced avocados and cucumber slices. For a meatless dish, skip the chicken! Instead of farro, you could substitute for wild rice or even quinoa!
Grilled Chicken with Pepperoncini Pepper Salad
Buy pepperoncini peppers to make salads at home. They taste great when you order chicken kabob salads at your local deli. Why not eat them at home as well? I like to over do it, since I like spicy. Here I served lettuce with carrots, avocado and grilled chicken. I served it with oil and vinegar dressing and lots of pepperoncini peppers!
Grilled Chicken Thighs with Lettuce and Beets
Grilled chicken thighs are juicier than chicken breasts and taste just as great and probably even better on a salad. I buy it skinless and cook it to give it some nice crunch with no skin! Here I served baby lettuce, sliced cucumbers, corn, roasted cauliflower, beets and avocado. A creamy dressing would be amazing here. However, I ran out and served it with caesar dressing (non-creamy kind).
Grilled Chicken Watermelon Salad with Feta
You may already know how much I love making watermelon salads. Specifically with seafood! However, this dish was a bit different. Here I made grilled chicken and served it with romaine lettuce, roasted carrots, watermelon and feta cheese. The carrots and watermelon give the salad some sweetness and the feta gives it some saltiness. Add some olive oil, squeeze of lime and a pinch of salt!
Sweet Chicken Salad
This sweet chicken salad is soo good! Use your favorite marinade, such as teriyaki, to make this chicken. I served it with wild rice, lettuce, tomatoes, corn and avocado. I used a pinch of salt on the salad and squeezed fresh lemon to serve. No oil needed!
Make It Your Way
Salads can be made any way you like. Use cooked or raw vegetables, add some starch, such as rice or sweet potatoes and add some leafy greens! As I always say, it’s all in the taste. Season your fish and meats with your favorite marinade or seasonings to elevate that boring salad!
