How to Make Chocolate Pumpkin Granola
Anything pumpkin in the FALL is a must! Those cozy vibes and the smell of pumpkin candles and everything spice! I want to share with you how to make chocolate pumpkin granola. It is perfect for those autumn parfaits and acai bowls. I bit of pumpkin spices to get you through the fall!
Pumpkin Spice
I use cinnamon when I make oatmeal and cream of wheat, along with some smoothies. However, once fall is here, I make pumpkin spice and use that substitution until about Christmas time. I really love it and it is super easy to make! There are different recipes out there but I use a recipe from the Taste at Home magazine. HERE are some more ideas on what to make with pumpkin spice!
Make Granola
Homemade granola tastes so much better than store bought. For one, it tastes fresh and two, you know what ingredients are in the granola. Another reason is, I love that I can control the crunchiness. Store bought granola can be too hard sometimes to enjoy. My teeth can’t handle all that EXTRA crunch!

The main ingredients to making my granola is quick oats, coconut oil and maple syrup.
- 3 cups of quick oats
- 1/2 cup of maple syrup
- 1/2 cup of coconut oil
Chocolate Pumpkin Granola
The idea to making chocolate pumpkin granola was trying something but also having pumpkin puree. Yes, I have already started making Chocolate Pumpkin Spice Bread (Super Moist). I had some pumpkin puree leftover and decided to make pumpkin granola. Of course, I needed to add chocolate, because who doesn’t love chocolate!
I have to say because of the pumpkin puree, the quick oats definitely softened up immediately, when I poured the maple syrup, pumpkin puree and coconut oil mixture over the oats. The granola was not as crunchy because of it. I could have baked it a little longer BUT everyone at home voted that it was perfect the way it came out! I agreed, since I mentioned too crunch is not my preference.
Taste & Texture
The taste was heavenly delicious! It was soo pumpkiny, with a light touch of pumpkin seeds for the crunch. The chocolate chips gives that extra sweetness that brings all the flavors together. You could of course omit the chocolate but this is a chocolate pumpkin granola! And then the colors! Definitely reminds me of the fall!
How to Make Chocolate Pumpkin Granola

Ingredients
3 cups of quick oats
1/2 cup of maple syrup
1/2 cup of coconut oil, refined
1/4 cup of pumpkin puree
1/3 cup of pumpkin seeds
1/3 cup of chocolate chips
1/2 tsp of pumpkin spice
1/2 tsp of salt + more for sprinkling
- Makes 6 cups
Directions
- Preheat oven to 300 degrees
- In a saucepan, add the maple syrup, coconut oil and pumpkin puree. Heat on HI until the coconut oil is melted and the pumpkin puree starts to loosen up. About 5 minutes.
While the saucepan heats up, add 3 cups of oats in a large bowl. Mix in the pumpkin spice and salt. - Remove saucepan from heat and immediately pour over oats. Mix well and pour mixture on a cookie sheet. Spread out evenly. Using parchment on the cookie sheet helps with non-sticking granola!
- Bake for 10 minutes; stir the granola and bake another 10 minutes.
- Remove from oven and sprinkle with salt. Do NOT Stir YET. Add the pumpkin seeds.
- After about 10 minutes, your granola should have cooled down a bit and start to harden. Give it a stir and you will see some chunks in there! Add the chocolate chips once granola has completely cooled and enjoy!
