Easy Red Beet Salad
Beets are so delicious! They honestly go well with every meal. Sometimes I buy them in a can and eat them straight from the can! Most of the time I buy them fresh to cook. There are plenty of things to make with beets. Here is an Easy Red Beet Salad to serve with your dinner, tonight!
Red Beets
The most popular beet is the red one. They look more like a dark, pink purple color, to me, though. Just like carrots, beets come in different colors. Red beets have a more earthy taste and golden beets are sweeter. I honestly don’t taste the difference. I love them both! Yet, I do prefer buying the red beets because I love the color and that is what I grew up eating. But either works!
Cooking Process
Beets can take forever to boil if you cut them into large chunks. But just like boiling potatoes, the trick is to cube these root vegetables into smaller pieces. And you will have them ready to eat in half the time! For this salad, I recommend using leftover beets, to quicken the making of this delicious salad. Beets can take a bit to cool down, which is why I prefer using leftover beets that are already cold in the fridge.
All Red Salad
This is a great salad to make for Valentine’s day. Adding red foods to your dishes. A great way to celebrate! This salad consists of red beets, red cabbage, red onion and cilantro! And then of course the dressing. But that is it! You could substitute the cilantro for your favorite herb, such as basil, parsley or even mint!
Red Cabbage
A tip to shredding cabbage thin is to use a vegetable peeler! I had no idea how my mother was shredding cabbage perfectly, every time, until I asked her! This is an amazing tip that saves me lots of time. Heck, shred the whole head of cabbage and store it in a large bowl or large ziplock back. Use it during the week to make salads!
Serve with
I like serving this salad with grilled chicken, steak or fish. For a meatless meal, enjoy this salad with a side soup or add tofu or beans for extra protein!

Ingredients
2 1/2 cups of cooked, diced beets (cold)
Handful of cilantro, roughly chopped
2 tbsp of red onion, cut small
1 cup of red cabbage, thinly shredded
2 tbsps of olive oil
2 tbsps of white vinegar
Salt
Pepper
Directions
- In a large bowl, add up your ingredients. Give it a nice toss.
- Then add the olive oil, white vinegar and some salt and pepper, to taste. Toss again to incorporate dressing and serve!
Notes
- Best to use leftover beets to prep this salad a lot faster! You want to make sure your beets are cold.

I went to it, saw your refreshing, bold salad photo, and clicked the Comment link intending to tell you it sounds scrumptious and I will buy beets and red cabbage next week … and I see I commented to you about this same post the first of the year.
